I have a bunch of people coming to dinner next week, one of whom has celiac disease. What I am looking for is a dessert recipe, something tried and true, that everyone will like. Please no flourless chocolate cakes or chocolate chip cookies. My favorite so far is the NYT David Tanis pear almond cake but thought you guys might have some other gems to share… Much obliged as always!
Now that I think about it, I guess I am looking for a standard cake that doesn’t taste like a gluten-free cake. They always make cheesecake when we go there, I have made flan and creme brulee before, and I just don’t like chocolate mousse. I hope I don’t sound insanely picky - I am just looking for something different and of course there is no way for you to know what we’ve already served.

Or find a good GF flour that you can sub 1:1 into your favorite recipes. I’ve had good luck with Steve’s GF cake flour though it’s a bit pricey. Just don’t attempt to split any layers, they’re too fragile.

Basque cheesecake is on my list! I saw a few the other day (first time I’d heard of it) on reddit’s r/baking and figured this is something I have to try.
If you do a search on the baking thread, there are several examples. I’ve made it two or three times, will get back to it one of these days. I also want to try the Japanese souffle cheesecake, which is a cross between a sponge cake and a cheesecake, but very light.

A few comments in case any future poster is looking for the same thing:
The chocolate roll cake was not pretty but great. I will happily make that again.
I made (once again) the David Tanis pear and almond cake, which is very easy and never disappoints.
And, finally, I made this, which was also a hit. To me, it was kind of a boring and forgettable fudgy cake, but there were no leftovers so I guess I’m in the minority:
