Fuyu persimmon uses

A friend brought me a bag of Fuyu persimmons. What are your favorite ways to use them? Thanks.

  1. Sliced, grilled and wrapped in some prosciutto

  2. Julienned, tossed with some julienned fennel, bean sprouts, and julienned cucumbers with some lemon vinaigrette with Greek yogurt for a nice winter coleslaw.

  3. Cubed and stir fried with roasted garlic

  4. Straight up raw.

There is a Korean drink made with dried persimmons (I know drying the fruit whole is common in Korea and in China). It’s simmered with cinnamon and ginger, and some sugar for sweetness. I love it, but I’ve never tried drying my own fruit. I usually get the dried ones at the market. On a bonus side, the ginger drink is good for your health, provided you don’t use too much sugar for sweetening.
