Sliced, grilled and wrapped in some prosciutto

Julienned, tossed with some julienned fennel, bean sprouts, and julienned cucumbers with some lemon vinaigrette with Greek yogurt for a nice winter coleslaw.

Here’s one for vinegar
There is a Korean drink made with dried persimmons (I know drying the fruit whole is common in Korea and in China). It’s simmered with cinnamon and ginger, and some sugar for sweetness. I love it, but I’ve never tried drying my own fruit. I usually get the dried ones at the market. On a bonus side, the ginger drink is good for your health, provided you don’t use too much sugar for sweetening.
