Food Preservers: Air Is the Enemy

People often wonder about buying stuff in Costco’s large bottles and jars: will the stuff–whatever it is–still taste good by the time I (or my two-person menage) get to the bottom of mayo jar big enough to bathe a small child in? Container size is not so important as keeping air out and getting air out. For my best whiskey and extra-virgin oil, etc., I use a Vacu Vin pump to exhaust air from bottles. For other stuff I have 2 rechargeable vac pumps, one for sealing plastic bags and another (not tried yet) that will supposedly pull a vacuum in Mason jars without using a hot-water bath. If anyone’s interested, I’ll report in some detail later.

Do you vac seal mayo?

I have never gotten through even a small jar without throwing out a bunch of it.
