That sounds perfect!. I’m making this one. The dressing is sort of fiddly, ( basically nuoc nam I think?), but so good!

Here’s tonight’s salad. A basic coleslaw from garden veg with a creamy carrot-ginger dressing:
Carrots
Scallion whites
Golden raisins
Ginger root
Cider vinegar
Mayo
Dijon mustard
Salt
Pepper
Blitz in a powerul blender and strain.

Today for lunch I made the NYT Cucumber salad with soy, ginger and garlic, which has a lot of dressing and plated it over mixed greens, with cherry tomatoes and a couple of garlic poached shrimp. No picture because I am in my office at work : )

I made this for dinner tonight. Eliminated the red bell pepper and added carrot and snow peas. 'Twas delicious.

For lunch recently, I mixed: chopped yellow peaches, chopped heirloom tomato, olive oil, lemon juice, a little Cajun seasoning, and crumbled feta. So good I made it the next day too! I think watermelon would make a good addition, but I haven’t tried it.
