Another recent win here: copycat Campbells’s cream of tomato soup - not entirely as creamy or sweet as the original, but it’s a really good creamy tomato soup that is not a bisque. This made a ton and I’m freezing half.

I made this coconut butternut squash soup today, with some somewhat sad and puny looking honey nut squash , vadouvan curry powder, and coconut milk powder.
I don’t use winter squash much, but I was intrigued by honeynut squash. Apparently because the skin is thin, it doesn’t keep as long as butternut. The hubs gave some soup we recently had at a restaurant a thumbs up, so I’m giving it a go! . Hope he likes this one. A bit heavy for me, but I like it.
