Favorite recipe(s) ideas for golden tilefish or rockfish?

Heya, HOs!

No doubt some of you are more knowledgable about these two fishies, neither of which I believe I’ve had, and def never made.

I have both in the freezer and was feeling like an easy dinner tonight.

Anyone?

When I used to get rockfish in my fish share I often went with a Vera Cruz-type treatment: Ro-Tel simmered with a bit of granulated garlic, onion and Mexican oregano, add fish and a squeeze of lime, simmer covered for a few minutes, remove fish to serving plate, add sliced green olives, capers, a bit of butter and more lime juice to pan, then serve over the fish with lime wedges. I like to have yellow rice with this but whatever you like to soak up the juices. You could rev it up with hot peppers. :wink:

I was wondering if either of them lent themselves more to a sear or a braise…

Rockfish is a fairly generic term but in my experience it is flaky like haddock if that helps. Paging @MsBean, fish chef extraordinaire. You could also go the crispy baked fish route but my experience of rockfish was that it needed some help in the flavor department.

I have a wealth of flavor bomb tomatoes that I should use up before we leave town for a few days, and so debated a kicky fresh tomato/corn/basil relish / sauce of sorts.

I may end up air-frying whichever fish I end up thawing, then just topping it with that.

But yeah, would love to hear @MsBean’s thoughts on the matter as well.

I was not familiar with either fish so did some googling. I have no experience with golden tile fish but if your rockfish is from the east coast it is the same as striped bass which we have all the time. In fact I just took out a large piece from the freezer and am marinating like the popular Nobu Miso Marinated Cod popular in the early 90’s.

Fish In Chilli Lime Sauce

Adeena Sussman’s Chard Wrapped Fish - which I don’t usually wrap. The only recipe I found was behind a paywall on Epicurious. I can’t take a picture of it if you’re intersted.

Broiled fish with a topping of mayo, dijon mustard, grated parm and pamko. Sounds disgusting but is very good.

Fish tacos

Lightly marinated in citrus juice and olive oil. Dusted with sumac and roasted. Reduced the marinade. added white wine for a sauce.

Thank you so much! Our fishmonger gets his fish from ME and MD, so I will assume that the rockfish is from the east coast.

I’ll have a closer look at the packages in the freezer and peruse the links you shared!

I hope it helps. I don’t usually cook by type but more by size. I scrolled through my instagram to come up with some of these as I was drawing a blank.

I have basically all the ingredients for the chili lime fish at home, aside from fresh cilantro, and I love Thai flavors, so this might be a winner :slight_smile: Don’t see why I couldn’t air-fry the fish, then toss in that delectable sauce!
