Favorite quince chutney recipe?

I found this thread searching for what to do with the one I have. I bought two green at a Mexican market, tried a bit unripe and let one ripen. Smells amazing, and I’m macerating

while I look for something simple. Preserve or jam I think. Or maybe a pickle. Does it change colors with cooking? Yes!
