Favorite potato recipes

Hard to find a potato I don’t like. If I have to choose:

Pommes Anna
Gratin with gruyere
Thin and crispy fries or crispy on the outside steak fries
Hash browns - the shredded kind
Grandmas latkes fried in schmaltz

The other night we had Yukon golds crash style, crashed on a little olive oil and drizzled with a little olive oil and sprinkled with salt and pepper. My new favorite mashed potatoes are pushed through a fine tamis (fancy French term for drum sieve) and stirred with salted Kerrygold and Mexican crema (similar to creme fraiche). Been enjoying steamed new potatoes tossed in butter with fresh flat leaf parsley. Thinking of making pommes Anna with something else in them, maybe leeks.

For whatever reason I’ve been on a baked potato roll lately, I’ve probably eaten more baked potato in the last couple weeks than I have in the last decade.

This one was a favorite - leftover chicken Tikka masala sauce, muenster cheese, jalapeno and scallion. Indian sauces and potato is such an obvious and natural combo. Can never go wrong with Indian flavors and any vegetation.

There’s a couple of restaurants in Berlin that specialize in pimped out baked potatoes.

As I’m sure you can imagine, they’re hugely popular.

There is a local thing, baked potatoes with the usual butter, sour cream, green onions, and cheese with the crowning feature of smoked brisket. It is delicious but just too much.

Sounds good (save for the cheese), and I’d prefer the brisket on the side :smiley:

I usually get a sliced brisket sandwich, no sauce, coleslaw, and, if I am pretty hungry, a jalapeño sausage wrap. If I am at Opie’s on the right day, I get butter beans instead of coleslaw. If I were mixing a baked potato and meat, I would much prefer chili and not much else. Baked potatoes and chili type seasonings pair quite well. A baked potato with salsa casera is awfully good. It is also really good over hash browns or breakfast potatoes, all topped with a fried egg. Heck, I’ll just add the frijoles refritos and a tortilla for mopping and make it a huevos rancheros plate. Breakfast potatoes are also wonderful in tacos. I like breakfast potatoes, guacamole, and white cheese. I salute your standing for brisket served separately.

I’ve been enjoying shorts from this channel, “jacket potatoes” in the UK. Apparently a favorite combo is beans and tuna salad which sounds crazy to me, but I’d like to try it one day! A baked potato “burrito bowl” type operation sounds awesome, can’t go wrong with that!

Speaking of brisket I think I saw that as a special in one of their episodes!

Baked potatoes topped with chili con carne or veggie chili, optional cheese and sour cream, is quite popular at ski resort cafeterias in Canada.

Tuna salad with corn and mayo seems popular on jacket potatoes in the UK, too.

They have jacket potato concessions at some train stations, for jacket potatoes to go.

Yeah, no tuna salad in my baked / jacket tater. While I enjoy a tuna melt, the idea of cold tuna salad on a scolding hot potato just doesn’t sound good, and neither do beans.

Gimme good butter, salt, TPSTOSSC (scallion sour cream), and Ima happy camper :slight_smile:

I think for us Americans it sounds absolutely insane! But it’s popular enough that even Costco sells it. Just look at this monstrosity.


@Phoenikia I mean chili cheese and sour cream is a very obvious combo for anything including a potato! I actually made like an Indian keema/chili/Bolognese type thing and have been topping my tatos with that, and wishing I had sour cream to go with it.

I dislike red chili, veggie chili, and chili con carne, so it isn’t a choice I make! LOL. I was annoyed when I went on a day-long tour of Yellowstone that cost around $400 back in 2017, and the lunch they served at the lodge was bison chili, beef chili and / or veggie chili. Those were the only options. I understand the lodge accommodating vegetarians, and I understand the lodge accommodating meat eaters. They didn’t think about accommodating people who don’t like chili. Haha.

I ate corn chips with cheddar, sour cream and salsa for lunch that day. (The toppings for the chili, for everyone who likes chili)

I do like sour cream on baked potatoes, and I like twice baked potatoes with bacon and cheese.
