Endives, what to do with them?

I had this same endive dish from Andres’ Vegas restaurant Jaleo. It was very delicious.

Red chilies- A woman frying red chilies in Vembakkottai camp. Red chilies are extensively used in cooking by Tamilians from both Sri Lanka and India.
