Dressing a taco salad?

Please share your ideas. Assume we’ve got greens, beans, some type of meat, corn, chopped tomato, avocado, tortilla chip crumbles, and scallion. Or something in that vein.

I’ve always dressed it with a tomato salsa/pico. I’d love some new ideas. PS - non ranch style please. No one in my fam will eat ranch, me included. I’m fine with buttermilk, yogurt, and sour cream, but they don’t enjoy it, and gravitate towards vinaigrette. Back in my SoCal todays, Cheesecake Factory had a wonderful peanut/lime/cilantro (I’d have to sub out the peanut for an allergic kid with something like pepitas…). Thanks!

I like ranch dressing but how about green goddess or one of these.

Thanks! I’d probably gravitate to the first, since I really like that sweet/sour/spicy thing. Once more of my herbs are up (parsley, mint are babies currently), I might try the green goddess. Do you have a favorite recipe?

I always fall back on home made salsa and sour cream with a little extra lemon or lime when it comes to taco or fajita salads.
Trader Joes has a pretty good cilantro dressing in the veggie section, doubles as pretty good marinade too.

Oh - too late! My husband just went to TJs this am, which means we won’t go back for a couple, three weeks now. I’m actually one of those cilantro haters - usually - but every so often, I’m myself surprised how well it goes in something, and how much that something feels like it’s missing something without it. There is a deconstructed chicken enchilada recipe I use and the green sauce it almost 1/2 cilantro (the rest tomatillos and alliums) and I couldn’t eat the enchiladas without it!

This recipe is from roxlet from my Chowhound days. It is my favorite
1 cup mayonaise (reduced fat is OK)
1 tablespoon fresh lemon juice
1 clove of garlic finely chopped
1 tablesppon tarragon vinegar (or use white wine vinegar with a tiny dash of taragon)
1/4 cup finely chopped green onions
1/4 cup chopped parsley
1/2 cup sour cream
4 anchovies, chopped
freshly ground black pepper

Put all the ingredients except the sour cream into a blender. Blend until all ingredients are well amalgamated. Remove to a bowl and stir in the sour cream. Do not blend with the sour cream.

Sounds like something I’d be eating alone :slight_smile: I’m very intrigued by why you should blend with the sour cream…

I have been making a very simple jalapeno-cilantro sauce lately that my (ranch and sour cream hating) DH loves on all types of salads, tacos, fajitas, etc. Equal parts (ish) mayo and Greek yogurt, with a big handful of diced pickled jalapenos and another of chopped cilantro. Pinch of cumin if you’re feeling fancy. Then add enough brine from the jalapeno jar to get the consistency and tang you desire.

The green goddess dressing by @roxlet that @BeefeaterRocks posted above is one of my favorite dressings of all time. It sounds like it might not work for @Sasha’s family but it’s fabulous!!

Blending the sour cream with the rest of the ingredients tends to make the sour cream become watery. It is the work of a moment to do that part by hand.

Don’t you just love [i.e. hate!] it when people are inconsistent? The fact that they hate ranch (i.e. mayo or buttermilk based) and sour cream - same with mine - but love a dressing combining mayo and yogurt. How can a rational person work within these parameters! :slight_smile: Seriously, I might give this a spin. The next grocery delivery I get has a cilantro bunch coming…

Huh. Catalina used to be our go-to bottled dressing many years ago. I think we found an unopened bottle in our pantry once that was about a decade old. It had gotten very dark brown :slight_smile:

I’d be eating this alone too :slight_smile: Sour cream is very low on the list of things my 3 will consume. Cause they are dumb. I love sour cream. It’s the Russian in me. You can’t be Russian and not love sour cream.

Dumb doesn’t even begin to describe it! I LOOOOOOOOOOOOOOOOOOVE sour cream. And I fully DO NOT understand how anyone can hate sour cream but love Greek yogurt. But anyway, let me know how they like it if you give my dressing a try. It is way simpler than it should be to taste as good as it does!

Love sour cream too, but not mayo…have a family member that mixes mayo and sour cream when making dips. :frowning_face: I just can’t do it.

This I can understand - mayo and sour cream are very different beasts. But sour cream and yogurt (especially greek yogurt) are basically the same thing, except that the yogurt has less fat.

I just stir together either salsa or taco sauce with an equal amount of sour cream or yogurt.

Stupid simple, and always draws raves.
