Absolutely not excusable but that kind of behavior is unfortunately still relatively quite common in restaurant kitchens (especially in high end ones). Here is something about David Chang who is well known for his toxic kitchen environment- “…As his success grew, so did his volatility. At Momofuku Seiōbo, Chang’s casino restaurant in Sydney, Australia, he screamed at a maintenance man for whistling and threatened him with a knife…” And I don’t think that had any significance on his continuous success in the restaurant and supermarket world.
Chang is just another douch-bro that got away with his volatile temper because he was “innovative “ Assault is assault no matter how good your noodles are.
I completely agree but it shows that those actions, even when published in newspapers and elsewhere have little consequences
Bringing in that many people from Denmark is ludicrous. And yes, he made interns work for many, many hours a day in abusive situations for zero pay.

Past abuse, which he seems to be admitting at least in part here, requires justice.
It’s a me too moment in restauration and chefs. I’ve heard violence or abusing language in French kitchens, but hitting people and seeing blood, that’s crime! This guy has issues. But saying that it was past, now I am a new man is even worse, what a manipulator.

The whole toxic kitchen culture originated in France including physical violence. Violence in French kitchen is still pretty common “…One told Bouazzouni that a chef had burnt her arm when she made a mistake with a recipe. Plating poncy food with tweezers isn’t a hard ass business. It’s putting poncy food on a plate for people with more money than sense.
