Demeyere Plancha

Apparently, Demeyere discontinued the Atlantis 7-ply plancha / griddle? Can someone summarize the different sizes that were available and what I should expect to spend if I find a used one?

There was a lot of info on CH about the Demeyere planchas, both the 7 layer and the 5 layer ones. I have a smaller 5 layer one. The first time I used it, I think the retained heat messed up the electronics on my stove - the display showed an error message and nothing worked. I had ordered a new .stove just the day before, so it was an oh well event. The plancha made good cheesesteaks.

I guess in theory, if you had an induction stove where two plate areas were not designed to be connected, you might end up heating some surface that was never supposed to be heated.

Not relevant to Demeyere, but I am pondering this one for use over gas burners:

Aluminum scratches easily and I would have concerns about aluminum leaching into food, especially at high griddle temperatures.

This wasn’t an induction stove. My new one is, however…

Aluminum can be seasoned, making it much less prone to sticking than SS. I thought the aluminum scare had been debunked.
