Emphatic yes to Wondra!
Iāve recently gotten some ginger paste from the refrigerated produce section havenāt used it yet, but the garlic paste is very handy for anything that doesnāt seriously rely on fresh garlic (Iām thinking Caesar Salad and pasta aglio e olio)

The trick is to buy a flavour you donāt like that much. I have an icey crystallizing 3 month-old Spumoni, a 4 month-old sticky , an icey crystallizing local artisanal salted toffee coffee gelato, and a tartufo with a bite taken out of it, in my freezer right now.
Again, does not compute.

I buy peeled garlic in bulk at Costco and split it up between 3 households. Then I freeze my share. I MHO, freezing tempers the bite.
I split my fresh ginger into 1 or 2 inch segments and freeze it. I donāt like jarred ginger for whatever reason and Iām always scared the jarred garlic will go bad.

I love the ginger paste in the squeeze tubes. Also like the lemongrass paste from the same section. And they keep for quite awhile. I bought the garlic one by accident and it wasnāt a buy again for me. Iām mote of a garlic powder kind of cook
