Decision made: I'm taking a latke shortcut!

The tonight brings the Latkes home…I do remember making them 50 plus years ago in my great grandmother’s kitchen, sometimes frying them in schmaltz and other times Crisco…
Tonight I do them both coarse grated and fine grated, but have four others doing the frying and cleaning…I will be the catalyst and get things going, then the Maschegiah , then the supervisor of the cleanup…
The house will stink, but who cares, the smell of a good latke from my Great-grandmother’s kitchen still rings true in my olfactory, and it is that which I hope to pass along this fourth night!

So what is the rule of thumb on proportions? Used about 1/2 t. On 20oz shredded potatoes and it was way too sour
