I think you misunderstood what I wrote: it was not about whether Jews and Muslims can eat water buffalo.
You are expecting much greater analysis among the consumers than exists.
When you go to a Muslim butcher (or dive restaurant) in many places, the common descriptor for type of red meat is simply “bada” (big) or “chhota”(small) – for the size of animal.
As I said before, there are sub-communities within Hindus who do eat buff (as buffalo meat is now often called, to distinguish from cow meat after the beef ban in many states) – not due to deep religious analysis, but usually for socioeconomic reasons (it’s a lot cheaper than goat) and availability. (Similarly for pork.)

FWIW, there are some Indian restaurants in the U.S. that serve American bison. They tend to be restaurants touted as “modern indian”. Hemant Mathur (multi-Michelin starred chef) uses it (and yak and camel).
The spice company Diaspora Co has been commenting on a similar theme.
