Beyond Caprese: burrata, mozzarella di bufala, stracciatella

I like to make a pot of spaghetti, add fresh diced tomatoes with all their juice, some tomato pesto and parm, and top with a ball of gently mashed burrata. Sprinkle with parsley.

Burrata on a summer vegetable ratatouille. Cut a ball of burrata in half. Place on the warm vegetables. The burrata gets a dusting of Aleppo pepper because we like it. Additional olive oil and sea salt at the table for the bread.

Pretty basic, but also quite delish. Think I might put the stracciatella on top of the tomato next time, tho. A bit messy to eat :smile:

Burrata with roasted grapes or peaches

Yah, I’m beginning to think that any ‘creativity’ with burrata mostly involves pairings other than the usual. Not that that’s a bad thing, per se.

A good burrata doesn’t really need anything but olive oil & flaky sea salt.

Hot diggity, Batman! That sounds like a delish combo, although the pistachio cream we have inda house is sweetened, I think. But I suppose one could smash up a few nuts. Arugula would be nice on that, too. I think stracciatella might have fewer explosion issues when chomping down.

I just Googled this and came up with a thinly sliced pile of mortadella, pistachio pesto, and burrata with flaky sea salt on toasted ciabatta. I am in love. They suggest bubbles. I am thinking of some small grower with PN and a bit of PM. Tomorrow I am off to Central Market to go crazy.

Enjoy!!! The videos I’ve seen use pistachio cream(unsweetened maybe?) but the pesto sounds delicious as well.

Summer in Austin means more basil than I can use. I have been loading pesto into every known sandwich except for peanut butter and jelly.

Lol! In these videos, they also use chopped pistachios but I guess the pesto would take care of that.
