I used leftover mashed sweet potatoes in a pumpkin muffin recipe and everyone raved about how pumpkin-y they were…in my case, I think it was the warm spices that fooled them…:shushing_face:

^ This. I found the same to be true with a pumpkin challah-type bread I used to make at Thanksgiving. Not enough oomph.

I do like sugar pumpkin in baked pasta dishes so I’ll still process and freeze when a sugar pumpkin comes my way.

Good idea, and I’ll use certain types of pumpkin for savory eating as well. For baked sweets, a hard no @tomatotomato. :jack_o_lantern:

We had a big sack of unopened whole wheat flour looking for a baking buddy…made challah. The shape is supposed to be apples but once baked took a pumpkin shape! Egg wash,seeds, honey drizzle.

They are so buttery. I am surprised how fluffy they are using all ww flour. Went well with sweet potato sage soup.

Haven’t been able to get canned pumpkin in our grocery delivery orders, but sugar pumpkins were available in our produce box. So I roasted two whole, scooped them out, puréed, and froze it. These two pumpkins gave about 8 cups of purée. Future bread, pie, and ravioli.

Brownies in lieu of a birthday cake for a long-distance family celebration.

Based on Alice Medrich’s cocoa recipe with some tweaks made over time (and a couple today).

Half with walnuts (“some” people griped that they were missing the last few times - I don’t like nuts in my brownies, so they only go in by special request) and half with chocolate chips (utterly unnecessary but why not).

I carried the ingredients and the implements with me for our long weekend trip - including measured parchment for the loaf tin (half recipe).

Now to make everyone wait till the birthday celebrity wakes up on the other side of the world…

Potato puffs. Store bought puff pastry, repurposed mashed potatoes with added garlic, herbs and baby peas.

I’d been holding onto Dorie Greenspan’s Chocolate Birthday Cake recipe ever since it appeared in the Times Magazine, knowing that’s what I wanted for my next milestone birthday. Well, said milestone BD came yesterday, and my wife made the cake. It’s relatively easy, and is exactly what a kid would want on their birthday–just right with a big glass of milk. The buttermilk in the cake and frosting keeps it from being too sweet.
