Any Eggplant Lovers Out There? If So What Are Your Favorite Recipes?

There used to be an Asian fusion restaurant near us that made a lamb & eggplant that was spicy & delicious
Alas they closed & i have no clue as to the recipe.

Have you looked online? There are dozens of recipes out there.

We recently got an air fryer and love to do eggplant as follows:

Cut 2 or three Asian eggplant in half lengthwise. With the tip of a sharp knife, cut parallel slits at 45 degree angles, trying not to cut thru the skin. Spray or brush with sesame or olive oil and put in cold airfryer set to roast: 380 drgrees and 15 minutes. Cut side up.

Check when you get the add food message and if the eggplant is showing signs of cooking, spread with topping mix and continue cooking until eggplant is soft.

Topping mix
2 green onions chopped roughly
1 tbsp grated ginger
As much garlic as you like
1 tbsp soy
1 tbsp black vinegar
1 tbsp black sesame oil
Chile crisp or hot chile paste of choice, to taste.
A bit of sugar
Add all to mini processor and process till a thick paste. Slather a good coat on partially cooked eggplant, use the rest for dipping

That sounds aMAZing. Does the paste really require a food processor or can it be smooshed up with a good chef’s knife/mortar & pestle?

That does look good. The local Ranch 99 used to have a food stand that made a lanb dish like thar with cumin but no eggplants. They had a large round grill in which they made a sort of wrap & rolled it in with cucumbers & lettuce
That was also delicious & now closed.

I have grown lazy in my retirement.

Adding cumin, toasted, would be superb.

I’m going to try this. And use a mortar and pestle per linguafood’s question. I ‘d love to buy a mini processor, but I just don’t have the space, and I do have a mortar and pestle. And an air fryer lol

This is my Imam Bayildi. There are a zillion recipes out there. We served it at room temperature. Hot, cold, lukewarm - it’s all good.

Back in the olden days (when I was in college), Wegmans used to have KILLER baba ganoush on their Mediterranean bar that I am 99.99999% certain contained yogurt (or sour cream or mayo, or perhaps a combination). It was very smooth with tiny black flecks from the charred eggplant skin, tangy and creamy and a paler color than those that are made from roasted eggplant alone (where the innards tend to turn a light tan caramel color when cooked IME). LOVED IT. Sadly it seems to have gone the way of the dinosaur along with many of my other favorites now that their stuff is all pre-packaged. I would try adding a bit of your preferred dairy to a recipe you like and giving it an extra-long whiz in the blender, see if that gets you close to what you’re looking for.

I had Pasta alla Norma once at a restaurant in the Montparnasse area of Paris that was unforgettable. In France, of all places. In the 90’s, I’m sure I’d never find it again.

I was ordering a lot of pasta alla Norma on my last visit to Rome in 2017. I don’t think I have ever eaten pasta in France :joy:(I would if I lived in France)

We were there for a business trip - eating cheap on per diem and lucked out for some reason. I also remember another culinary best of in London, also tagging along with my DH - had the most memorable spaghetti carbonara at a restaurant near our hotel. Also memorable because a woman drank too much, tipped her chair into a plate glass floor to ceiling window and medics were called. I did finish my plate of pasta…
