Our second dinner in celebration of our 34th anniversary. The 23 was the actual date and we had a good lunch and dinner too. But tonight was the first of two ‘fancier’ meals. It started off with the best aged chardonnay of my life. Mount Eden 1997! Rich, ripe, tropical w/ an unctuous texture. Creamy beyond belief. No way does this feel 25 years old! Lovely to have such an amazing experience after drinking wine for 50 years!
The main was Razor clams, which turned out one of my best dishes ever! I roasted potatoes in homemade Sichuan spiced oil and homemade ramp butter. Then tossed in garlic and green onion, heirloom tomato and a bit of the Mount Eden. Then I lay the razor clams over the potato and broiled it. So so good and perfect with the rich wine.

Salad of local arugula, Bulgarian feta, lime, makrut salt, olive oil. The makrut salt is part of a citrus preservation agenda I am working on. This is the zest of 3 makrut limes zested on a fine Microplane and then put in salt. The result is aromatic. I have green-skinned yuzu, buddha’s hand, and makrut. I will be interested to see how long the pungent citrus aromas last,
