Your Fav Vinegars - What Do You Always Have/Like/Use?

If you can send me the instructions you’ve used, I may make another stab at it. It’s been so long since I tried, I kind of remember some blue mold, but not the other things that went wrong.

Every year I ferment a batch of maple vinegar - my favourite for salads. A friend in the area has a maple syrup business so once he has new syrup in the spring, I buy a couple of litres of his old, unsold syrup to turn into vinegar. I use a recipe I found online several years ago - a mixture of syrup, rum, unpasteurized apple cider vinegar and water - and let it sit in a dark closet for at least 6 months. It develops that weird jelly-like “mother” and becomes a mellow tart and sweet vinegar. Super easy and just delicious.

Anybody tried American Vinegar Works? The Porter sounds good. The Better than Champagne is intriguing, but much preferring PN and PM to Chard Champagnes, I do not plan to try it.

There’s a store here that caters to the restaurant business, but also does retail. Through going there often I got to know the owners (it used to be a family business, then they sold and retired). I used to buy balsamic vinegar for about $20 for a 375ml bottle.

Once when I walked in to buy a bottle they told me they were out, but the owner told me he had a deal for me; he showed me a bottle priced at $120 for 250ml, but said he’d give it to me for $60. At the prodding of my wife, who mentioned that my birthday was soon, I bought it. I was amazed at how thick it was, and sweet and slightly spicy; really nice. At that price I saved it for salads.

I have become addicted to several flavors at Amphora Nueva. Blenheim apricot (on raw mushroom salad), black cherry (on vanilla ice cream) and maple (simply yum) are standouts.

Gremolata infused olive oil is also a “reach for” in my kitchen.
