Barilotti. These are quickly becoming a favorite short pasta shape. Might have to get more at Ocean State Job Lots! ![]()
Just picked up a bag of Cinque Buchi pasta at OSJL, as I was intrigued by its shape. According to the Google, it is/was “a traditional Sicilian pasta shape, specifically from the Catania area, typically served during the Carnevale season. Shaped like a wheel with four surrounding tubes and one central hole, it is designed to trap heavy meat ragùs.”
Renamed “Quattrotini” by Sfoglini pasta which features four smaller, ridged bucatini-style tubes around a central, larger tube to enhance sauce retention.
I WASN’T GOING THERE FOR PASTA! :::Sigh:::
Will definitely use this with my meat sauce very soon.
