Somewhere I have a recipe for a cake called Danube Waves. It was given to me by the same lady who gave me the recipe for terrific apfelstrudl.

I also was given a copy of Dr Oetkers German Baking book ages ago.

I have my cousin’s recipe for Donauwelle on a recipe card somewhere. I’ll post it when I find it.

Re: Schwarzwälder Kirschtorte, I lived in Freiburg one year in the 1980s, right in/near the actual Black Forest (Schwarzwald), and on my birthday (Sept., in case it matters), my generally super-frugal landlord bought for me and the young college guys he rented rooms to a whole Schwarzwälder Kirschtorte, and it was sublime. I’d come from the USA and thought Black Forest cake mixes in the USA must be the same as Schwarzwälder Kirschtorte, but I learned better, fast!

I like many of the things mentioned here. Am American but lived a bit more than two year altogether in Germany, various parts).

One of my favorite things when in Freiburg was something they called Quarktasche–sort of a sweet croissant filled with Quark, which itself is sort of halfway between cheesecake and cream cheese. I loved those, but then the bakery after a month or so never had them. I got the impression that it might have been a seasonal item, but the shopkeepers didn’t tell me, perhaps because they knew I came in every day for a while asking after them, and they probably wanted me to keep coming in and buy something else.

Quarktaschen are quite common in German bakeries and aren’t really seasonal (I guess your bakery didn’t sell enough and so stopped making them). Quark in general is very popular in Germany and one of the things we miss in the US (we make it sometimes at home)

We make cheesecake with quark.

It’s honestly one of my favorite desserts.
