A good pizza sauce is so easy I often wonder why I don’t make some and devour it with bread, la scarpetta for dinner. Hand crushed Cento San Marzanos, dried oregano crushed between thumb and forefinger, a teaspoon or so of red Banyuls, peperoncino, ground black pepper, a swirl of Sicilian olive oil, and a generous pinch of Diamond Crystal. Heating is not required if it is going on a pizza, but it would be nice if consumed this way.

Yum! How did you get the apples so caramelized without them getting burnt?

@BarneyGrubble I caramelize sugar and a liquid, it could be apple juice or cider for instance.
Then I reduce it to a syrup consistency , dark amber but not burnt, then add the apples. Cook covered a bit until they start to release their juice and then uncovered to thicken again. I turn the apples when I uncover . This actually doesn’t take very long.
Cool a bit, cover with pastry , I refrigerated while the oven finished heating up. Since the apples are almost cooked, it’s just a matter of cooking the crust. I use convection bake 400*.

Lunch today was jumbo lump crabmeat with a little linguine. The linguine was cooked in highly seasoned water with spicy Italian herbs, garlic and fresh bay leaf. Lightly sautéed scallions basil, parsley and tarragon were added to the linguine and crabmeat.

Dessert was a small cakelet with raspberries and blackberries.

Into town to run errands and stopped for lunch at RH Pub and Grill. Lots of locals there for good food and beverages.
We ordered Reuben sandwiches with onion rings and fish and chips which was cod with garlic fries. Everything was delicious, especially the addictive garlic fries. Our server was amazingly kind and friendly. Leftovers brought home for dinner.
Home again, home again, jiggity jig. Name the movie that’s from.

Crab, corn, congee with a little hot oil, ginger and scallions. I used the cobs to make the broth to cook the rice.
And a slice of yesterdays apple galette, hit the spot!

And I bring you from the Georgia Republic, Kubdari. In roughly the same family as the assorted Khachapuri versions, this one is meat based. It should be finely diced raw meat but I had cooked meatballs to use up. Smashed the meatballs, added grated onion, peeled and finely diced plum tomato and spicy seasonings. This turned out better than I anticipated :relieved_face:. Served with sautéed cubanelle peppers, Jimmy Nardellos and onions plus a couple of slices tomatoes vinaigrette. (TJ pizza dough)

Today’s lunch was a Thanksgiving redux. I had to go to the grocery store at lunch today for part one of this weekend’s grocery run. I went to Farm Boy (Canadian equivalent of TJs) then swung by their hot food buffet to pick up lunch. I love Farm Boy’s groceries but I’m not terribly fond of their prepared meals so I was trying to find something to eat. I heard one young lady tell her friend that they have a Thanksgiving “section” on the other side of the hot food buffet and sure enough they had sliced ham, sliced turkey and stuffing. So I got some turkey and stuffing then headed over to the veggies section to add some mashed potatoes to my meal. Everything was delicious! I know Farm Boy has turkey dinners for Thanksgiving and they seem to sell out pretty fast so I guess they made some of the turkey, ham and stuffing available for lunch for the next little while. No picture today since I scarfed everything down too fast :slight_smile:
