What's for lunch? (2025)

Quick ramen noodles with mushrooms. Recipe from Ottolenghi Comfort. Maybe his quick but it took me about 40 minutes. This is a delicious dish just spiced right. I would maybe add some shrimp next time.

Today’s lunch was a Thai style red lentil coconut soup. The recipe is from one of my soup cookbooks and this was the first time I tried it. Not bad but it could have been spicier .

The NY Times posted a recipe for non-stir polenta the other day, and I’m certainly going to try it soon. Gift link, I think.

I have a subscription, but I’m sure those who don’t will appreciate!

I have no plans of making my own polenta. I’m just not a big fan of the texture. But if @Amandarama were serving hers to me I’d def have some :slight_smile:

That is a Paula Wolfert recipe which I have made many times, can highly recommended it. I generally use an oval Le Crueset that has a large surface area which makes for cheeesy goodness.

“House Special Lo Mein” frittata - wheat noodles stir fried with chicken, BBQ pork, shrimp, carrots, rehydrated lily buds, and rehydrated shiitake mushrooms turned into frittata. Very pleased I managed to flip it and get back in the pan (and back out again) in one piece! Hot sauce at the table.

Asparagus and brie omelet, breakfast sausages, tater tots. The sausages, cooked in the skillet, were a little dry compared with the ones I air fried a couple of weeks ago. I should have popped them in the air fryer with the tots.

A very brown, but very delicious lentil soup with shell pasta and a young Parmesan to stir in. Using up stuff from the freezer - this was from New Year’s Day. BF has what we are hoping is a final interview for a promising job opportunity, so perhaps a little New Year’s luck will help!
