Late lunch after each of us had 1pm meetings: shared a taco flight of Cajun shrimp tacos (one each) and a lamb taco. I wish the guy had lamb more often. It was fantastic.

I repurposed the last of the stewed calamari, along with some tiny pink Key West shrimp into this brothy seafood rice, in the vein of this Rick Bayless recipe -https://www.rickbayless.com/recipe/seafood-rice-on-the-fly/

I pulled what remained of the squid out and held it aside in the fridge. Then I toasted arborio rice with some cumin in olive oil. The squidless stew got added at this stage and cooked for 20 minutes. Then I added the shrimp to cook for another 5 minutes. The reserved squid were added in the last minute of that to warm through. I finished the stew with lime juice, scallions, and cilantro, with hot sauce to add at the table. Very delicious!

Technically this is breakfast, but it has a lunch feel to it, so… veg fried rice with bits n bobs from the fridge. We had too many eggs in the fridge, so I used 3. I really like the WoL method that has you mix them with Shaoxing wine, white pepper & salt before adding them to the hot oil.

I also added 2 Thai bird peppers that unfortunately did not add nearly as much heat as I expected (shoulda used double), TPSTOG&G, half of a red onion that needed to be used, a third of a KOS chopped into bite-sized pieces, and the last of the yu choy & napa cabbage. Finished with the dumpling dipping sauce (soy sauce, rice vinegar, chili crisp, sesame oil) that I made… recently. Worked out :smiling_face:

Happy about more space in the fridge, and leftovers galore. Of course there are leftovers :roll_eyes: :smile:

That’s something that is not common here right now!

I may have mentioned before that I am very fortunate to get free eggs from a fellow musician whose hens are laying more than he and his fam can consume :slight_smile:

I don’t remember the last time I had lunch, but today decided to splurge a bit (plus I’m still trying to use up leftover meats). I just thin shaved some medium rare tri-tip sirloin, tossed in some avocado, S&P and about a Tbs of butter, warmed on power 1 on the Nuke-Wapper.

The beef itself was great but the avocado was a mistake; I should have eaten it on the side. Made for a sort of muddied sensation/presentation on the palate.
