What's For Dinner #99 - the Orange is the New Black Edition -October 2023

Yes… I think I’ll half the biscuit (Bisquick) layer next time. Personally, I liked the mayonnaise, etc. layer, but my girlfriend did not.
I’ll keep tweaking the recipe until I find something we both like.

Total cluster f%*#. I marinated lamb chunks for kebabs and had all the veggies prepped. Rice and a dhal makhani type thing made too, plus left over green salad. Put the skewers on the grill and returned in 5 to check progress - propane tank was empty. Shit. Threw it all under the broiler and eventually dinner was served. Far too frazzled to remember a picture. Sternly admonished #2 son to get a refill tomorrow. Opened a bottle of red blend in order to nurse my wounds. Now watching cute animal videos on Youtube

Shrimp quesadillas WFD: plump black tiger shrimp I cut into smaller pieces (tho I prolly also shoulda halved them lengthwise first) tossed with a little olive oil and orange pepper, sauteed red peppers & onions, quesadilla cheese, pickled jalapeños. Topped with Herdez avo hot sauce, guac and sour cream on the side & a selection of hot sauces.

I’d suggested we split a ‘dilla cuz I knew it was gonna be plenty, but now we have a nice lunch to look forward to. Win/win.

My PIC’s killer 'ritas.

The last of my homemade sesame seed sub rolls, classic beef and pork meatballs, mozzarella, and giardiniera (I wish I’d made like half as much because I still have so much :joy: ).

Been there. That’s why we have 2 spares at the ready. Never again!

Chicken thigh “tikka masala” (simmer sauce; not bad but better thought of as somewhat spicy tomato sauce), jasmine rice with peas, tired broccolini. Not bad but not great.

The topping sounds a lot like tomato pie. It gets mayo and cheese, and I absolutely LOVE tomato pie. Since you like that sort of topping, maybe someday you might give that a try.

It sure looks delicious!

Thank you, yes. I’ll definitely do some research into “tomato pie”. I could always make two small casseroles in loaf pans, one for my girlfriend without a mayo topping and one for me – with.

Beef galbi, rice, and arugula salad with a muchim-ish dressing. Hit the spot.

Orange ricotta cake for dessert later, after we cut my sis’s birthday cake on video.

Still traveling, had a nice seafood lunch so not starved for dinner. DH picked up deviled eggs, tabbouleh, shrimp cocktail for dinner, from a local market. Cocktail sauce spicier than you might think. Eggs improved with the cocktail sauce, tabbouleh better with the lemon and arugula from the eggs .
A pretty good dinner, wine for all!

Only fixed half an Italian sausage & pepper sub with a few Lay’s chips on the side so I would have plenty of room left calorie wise for a slice of German Chocolate cake from Kroger. Went in the kitchen later and he had taken a few bites out of it so no photo of that.

Just to clarify - We buy 2 slices at a time. Not a whole cake.

I would make a Mornay or bechamel and bake it like lasagna.

I made TJ’s Frenched pork chops with Spicewalla honey-herb rub, farro cooked in broth with pan-roasted Delicata squash, apples cooked in the pan drippings, and leftover salad. Yum.

Thanks! Surplus food clean-out, basically. Some celery or walnuts for crunch would have been nice.
