Last nightâs dinner was a bit of a fail. I was trying to make a John Wayne Casserole again, but Sunshine told me she didnât like the top layer which has mayonnaise in it. So I substituted in mashed potatoes as a top layer â kind of like a Shepherdâs pie along with some cheese and crispy fried onions. The whole thing was just too dense. It was edible, but not enjoyable. (back to the drawing board)

Love the shepherds pie parts (ie no biscuit base) so Iâd just skip the base - though I guess thatâs not the casserole you intended. What about a cheesy white sauce topping? Kind of like a biscuits-gravy situation when served.
(Now I want shepherds pie.)

Last night dinner for B and Spring Onion of locally-raised/produced beef burgers that we got at the farm down the street on pretzel rolls/farm broccolini with local chili-garlic sauce dribbled over it/leftover fries from our weekend excursion. Added leftover rice and beans but took the photo before I added that. I had tofu/Japanese greens/chili-garlic sauce soup.
Tonight was my usual desperation dinnerâfarm broccolini/seared TJs Italian soy sausage/chickpeas/tons oâ garlic and crushed red pepper/my new favorite local pasta brand (used campanelle tonight)/liberal fresh lemon juice. Sploosh of pasta water. Nutritional yeast sprinkled on top.
Way too much biscuit crust to meat/veggie ratio. And I can see where mashed potatoes on top would add to the problem. The mayo/sour cream/cheese topping sounded pretty good to me in your first post on this dish. In fact, some reviewers said to double it. Good luck with your revision.and thanks for bringing the John Wayne casserole to my attention. Never heard of it until then.
