Homemade Italian sausage pizza tonight. Crispy corner piece for me. Small antipasto type salad with bottled Ranch… I have read about hot honey on this board and seen it in stores. Just couldn’t pull the trigger on $12.99. So made a small batch tonight. omg, I think we’ve fallen in love with hot honey. Good stuff…

Leftover roasted chicken on toasted baguette with Caesar dressing and melted
mozz. Garden veg, ‘cuz you gotta have veg.

Oooh, you fancy! I was gonna just have it at room temp with MOAR lemon squeezed over, but now that you mention capers… :heart_eyes: maybe some finely chopped preserved lemon mixed with the capers? :thinking:

Tonight I made myself a chicken tinga quesadilla after volunteering at a school event. Coconut and black bean brown rice served as an appetizer before I went out.

I cooked a beef tongue in the instant pot and made some lengua tacos with tomatillo salsa and avocado following this recipe.

Leek soup with oyster mushrooms - Leeks are braised, afterwards cut up and majority for of it pureed with the broth and butter. Separately shallots and oyster mushrooms are sautéed and added to the soup with the remaining braised leek and chives. Finished with some olive oil

For years I’ve made a version of Thai Basil Chicken using fish since we always have lots of fish on hand. And for years, Mr Bean called it Larb. They are very different so I finally decided to try making Fish Larb. I used a recipe from Hot, Sour, Salty, Sweet, one of my favorite books.

I poached the fish in water with lots of lemongrass and lime leaves and then chopped it. It was mixed with herbs - I used a mix of Thai Basil, cilantro, and mint - and then tossed with a dressing of diced red onions, Serrano chile, brown sugar, lime juice, fish sauce and toasted rice. Served with a riff on green papaya salad made with some green beans that needed to be used.

I think the Larb may be Mr Bean’s new favorite. I hope when he asks I know which preparation he is really asking for.

I love laab. Such a great, easy summer dish (well, save for the toasted rice part). I make a version with ground turkey.

There’s a place that does a whole fried fish in larb dressing that I love — they chunk up the fish and fry the cubes, and then fry the skeleton, so when you finish the pieces you can pick off the bones. The dressing is fantastic, and the contrast with the bits of crunch is so good!

We went to Zabb Elee (closed now?) that specialized in different kinds of laab: duck, chicken, turkey, pork, fish - you name it) at different heat levels. Interestingly enough, a 4 was much hotter to us than a 5 (the highest).

Apropos laab/larb: Laab Moo Isan (Thai Isan-Style Minced Pork Salad)

Yes, laab and larb are the same thing. The same goes for laap and larp. That said, laab and laap provide much better approximations of the correct pronunciation for the word in Thai, as the “ar” sound in English resembles the Thai pronunciation the least.

Thank you. I wasn’t sure about using fish but the first line of the recipe said it is traditionally made with minced pork, beef, chicken or fish so I figured I was not straying to far from the accepted. I’ve only seen it on menus made with pork or chicken.

I made a bigger batch of the toasted rice than called for in order to have extra. I make various versions of the salad but don’t usually bother with the toasted rice. Now I’ll have some for future dishes.

I caved last night and picked up “marinated” chicken, rice and peas from a local cafe in town. I just couldn’t do another salad or bowl of cereal for dinner (still without full power). Not sure what, if any “marinade” there was on the chicken, and it was overall very “meh”, especially with overcooked chicken, but at least I didn’t have to think about putting something together. I’ll try another place tonight.

But based on quick convo with the electrical contractor when I left for work this morning, it’s not going to be done today either (although he was waiting for the excavator to show up). Too much effin’ red tape to deal with National Grid, wire inspectors, blah blah blah. I hate all of them. Especially with a heat index today of close to 100 degrees. :hot_face:
