Last night’s dinner was a “throw together” dinner. Shake & Bake Pork chops, Knorr rice side and green beans (apple sauce on the side).

No muss, no fuss, paper plate, coke straight outta the can like a gangsta. Banquet burger and onion rings with a blob of catsup, from a favorite local burger joint just down the street.

I made ATK’s cast iron pan pizza and overall enjoyed it, although I think the sauce for this American-style pie needs tomato paste. I reduced the oil in the pan by 1 Tbsp and it was fine. I also used regular AP flour and an assortment of cheeses b/c quarantine.

Broccoli and veggies with dip on the side. I will never microwave broccoli again; it’s just spongy, exploded, and not good. Steamed is far superior.

I once worked with a gal who only drank ice cold Coca-Cola in a glass bottle. She said Coke in a can couldn’t begin to compare with the glass bottle. I’m not much of a soda drinker so I took her word for it.:slightly_smiling_face:

Delivery pizza - quattro formaggio with added roasted mushrooms, onions, and garlic. Really, really good!

They are GREAT!! I can’t tell you how many times I’ve needed a starch to go with dinner and reached for a Knorr Rice Side.
12 minutes in the microwave and its ready.

Pumped, Proud and Pleased…Stunned by the outcome of my super-delectable, made-from-scratch " Baked Chinese stuffed Crab Shell using freshly shucked BC Dungeness Crab meat, butter sauteed diced Onion and Bechamel Sauce " Soooo Good! Wow!!

Posting tonight; a tiny bit proud of myself. Also learned a **Big Lesson.

A few years ago my library offered a little class on how to make Vietnamese Summer Rolls. I invited a group of about 18 friends to come over for some, big hit!

I decided to make them again, just for my daughter and self, maybe a friend will stop by later.

The lesson: too much work for one day … needs to spread out over 2-3 days. Yesterday I had to stop at 2 banks, then 2 markets, came home and started washing and drying red leaf lettuce and herbs.

My daughter told me to buy Rau Ram; I still haven’t tasted it, hate that you have to buy such a big package of it. Also used mint, cilantro, a slaw made with julienned Japanese cukes and carrots, jalapeño. Rice vermicelli.

Made Woks of Life Nuoc Cham, another recipe for peanut sauce, used Ina’s recipe for the roasted wild shrimp.

Photo of 3, mine is middle one, my daughter didn’t want advice and overfilled hers.

One was surprising filling!

Larb salad. I made larb, piled it onto butter lettuce leaves then added cucumber, carrot, haricots verts, sour & spicy dressing left over from something. There was a bunch of tequila. I blame my hairdresser.
It was another 90+ degree day, supposed to have thunderstorms tonight. Please no lightening fires. We already have one burning northeast of Gold Beach.
