What's For Dinner #95 - the Hot Fun in the Summertime Edition - July 2023

omg i’m embarrassed to say we never actually made it out to the beach this time! we usually take a long group walk on Saturday mornings but this time we stayed in. it was very foggy and cold in the mornings, but by about 1 or 2 the sun would come out and the weather was perfect. Closest we got to the water this time was eating oysters at The Marshall Store! :stuck_out_tongue:

Everything was outstanding, especially the unusual soft shell crab preparation. I saw other people getting the bone marrow appetizer and it looked fantastic, but I could only eat so much :smiley:

Yeah I’m normally a thin crust girl but this was puffy and fluffy and lovely :blush:

Depends on your source. The curly parsley I’m getting in Germany (FM or supermarket) has a lot of flavor.

Farm Boy(local grocery chain, similar to TJ’s) with my usual sauteed romaine/roasted peppers/cocktail tomatoes/red onion/loads of garlic/garlic stuffed green olives and the chili oil I made the other day which added a nice kick to the dish.

Costco rotisserie chicken, roasted red potatoes with rosemary and tabbouleh. Less salty than expected. Plenty leftover. Maybe chicken salad, maybe I’ll just keep visiting the fridge and eat it till its all gone.

Teriyaki chicken. Cukes in an Asian-inspired vinaigrette, with sesame seeds. Rice.

I made pad krapow gai from the NYT, served over white rice. I’d like more now.

Dinner was seared and roasted chicken thighs, seasoned with s&p, garlic, oregano, pimenton. Served with aji verde and cilantro. Chared fresh corn salad, tomatoes, avocado, red onion, cotija cheese, cilantro with sherry vinegar & oo dressing. I had a Red Snapper that left me craving something more gin forward so I had a Beefeater martini rocks and there was wine with dinner. There will be a repeat of last nights dessert later.

Your tuna casserole calls to me. I’ve been under the weather for a few days. Had some cottage cheese and canned peaches yesterday. Made poached eggs on toast for supper. Keeping my fingers crossed…
