Sous vide steelhead and grilled asparagus - finally in season! Woot! I should stop sous vide-ing fish. I’m not crazy about it.

Chili with ground beef, red kidney beans, poblanos, baby spinach (was sitting around in the fridge and had to be used), onion, garlic, crushed tomatoes, tomato paste, ancho chili powder, cumin and bittersweet chocolate - the chocolate and chili gave it a flavor reminiscent of mole.

I’ll amend - I don’t mind sous vide for lower-fat seafood, but I prefer to cook off some of the fat from the steelhead. It’s a little much.

Saturday dinner was grilled sausages, peppers, onions, and baby zukes. Caesar salad, a baguette, and a tomato/basil salad that is out of view. Great to have the farmers market getting into gear.

Last night I heated up a jar of Rao’s marinara sauce (highly rated in recent WaPo survey of jarred sauces) with meatballs made previously and stashed in the freezer, mixed with linguini. Served with more Caesar salad and steamed broccoli. Nice and easy.

Two other potluck guests cancelled, so it was just the hostess, her fam, the barkeep & his mom, and us.

There were Cornish pasties (not my cuppa), incredible prosciutto shaved straight off the bone, my beets w/feta, my PIC’s lamb kebab, and the hostess’ green curry. We’d gotten the leg of lamb at Aldi, and while I am generally quite happy with their products, this was not the best quality ever. Lots of connective tissue :frowning:

Do you roast or boil/steam the beets? I have some lovely feta on hand…

I was silly lazy and grabbed a package of pickled sliced beets from Wegmans & a package of just steamed baby beets from TJ’s.

The pickled beets were more interesting, so even if you roasted them I might add a splash of vinegar to them.

Roasted red peppers and Kumatoes on ciabatta rolls with fresh mozz, jarred pesto, and garden basil. Worked in a pinch. My foot didn’t heal after starting weight bearing so I’m back on crutches.:pensive:

Fortunately I got lots of groceries and did cleaning catch-up before losing the boot.

After living on my own for 35 years I finally made my first kitchen disaster. Hopefully you can laugh with me on this one… So tonight I planned on making Thai beef curry. On Sunday night I wash the dishes then take out of the freezer the meats I need for the upcoming week. Last night I forgot until I was ready to watch the 11:00 pm news then go to bed so I hastily took out the meats I needed for the next few days. At dinner time tonight I took everything out of the fridge that I needed for dinner - the steak, the veggies and the sauce ingredients. While I was heating up the oil in the fry pan, I julienned the red pepper, the bok choy and assembled the sauce ingredients. When it was time to open the zip lock bag of steak I noticed it was kinda small to be steak. When I opened it lo and behold it was beef liver. So tonight I present to you Thai liver curry. I wouldn’t use liver again :nauseated_face: (Apologies to those who don’t like liver. I tried hiding most of it under the veggies. )

I label everything in the freezer with painters tape. After the time I took out what I thought was fresh mozzarella. It was tofu. So pizza night had to wait.

We had a ‘friend’ that would clean out our freezer when we would allow him to house/pet sit for us. After losing a lot of steaks I had put away, I labeled every carefully foil wrapped package ‘liver’. No more missing steaks after that. The same ‘friend’ that poured the remains of a Long Island Iced Tea into my ficus at a Super Bowl party. Good bye, ficus.

Lazy meal tonight: tacos with Aldi’s carnitas. Not as good as the shrimp tacos I made recently, but serviceable.
