I began today with Chocolate Chip pancakes for mom before I went to work and ended it with cocktails and Indian takeout. A delicious feast of Chicken Makhni, Paneer Saag, Vegetable Korma. There was also Tandoori Chicken, Chicken Kashmiri, and naan. No matter how many times we make Indian food at home, it is never quite the same. Awesome dinner. Mom enjoyed.

Boring Aldi pizza: Mama Cozzi’s rising crust with garlic, spinach & mushrooms. Sautéed some extra baby bellas and added a few leaves of baby spinach on top, as well as MOAR grated cheese.
Still was a pretty meh affair - crust was too bready for my preference (but probably good for thems that like this type of crust), and was lacking salt.
Thus endeth our Aldi pizza experiments for the time being.
I spent most of the day planting stuff in my yard/deck and my neighbor‘s deck pots. So dinner was easy - bacon, eggs, tater tots, and tomato salad with the last of the blue cheese dressing.
Roasted pork tenderloin with Penzeys’ Tsardust Memories seasoning, roasted yellow potatoes seasoned with olive oil, s/p, and Herbs de Provence, and steamed green beans. Homemade applesauce.
Recreating a much-missed, childhood favorite, homey, traditional Cantonese ‘seasoned rice’ dish that I first enjoyed at my Grandma’s home in Hong Kong decades ago!!
Based on variation on a theme of the popular Stirred Fry Glutinous Rice with Mixed Meat, this labour intensive, yet simple ’ morphed ’ dish took me over 3 hours just prepping the Mise-en-place alone…Diced and/or chopping - Long Beans, Winter Bamboo Shoot, Preserved Turnips, Chinese Shitake Mushrooms, Sun Dried Shrimp, Canned Abalone, Chinese Preserved Pork and Duck Liver Sausages, Cantonese BBQ Pork -(Cha Siu ) and Roasted Cantonese Duck Meat
Preparation: Stirred fry ingredients, mixed and stirred in boiled rice, seasoned with clay-pot rice style, sizzling oil soy-sauce, cover and simmered for a few minutes to let flavour develop.
What an incredibly delicious composition, oozing with complex taste profile and contrasting textural interplay.

Back from Lisbon/Barcelona! Wonderful time, ate all the good things! I was back yesterday, actually, took today off to get re-acclimated. Was feeling very bloated (though scale says i gained NADA, which always amazes me about vacay - we ate SO. MUCH.) so I told the BF i wanted small plates and salads and to lo carb it for a while. My sister and I ate a ton of seafood on our trip but salads are not that easy to come by, especially in Spain. So BF made us piri piri (brought back from lisbon) chicken breast, a tomato and onion salad, and sauteed zucchini. nice and fresh and light. I started curing red peppers to make massa pimentao, a pepper paste that i actually didn’t see on this trip but that i remember making a ton of last time we came back from Lisbon.

Seared and roasted blsl chicken thigh, a splash of chicken broth added to the drippings for a pan sauce. Zucchini, carrot patties with aioli. Mixed greens salad, green onion, orange pepper, mushroom, avocado, ranch. Sangria.

Blackened mahi mahi; asparagus, radish and arugula salad with parm dressing. No notes! I did it right!
Camping on the coast in our 16’ trailer. Dinner was chili with beans, brought from our freezer at home. I like mine with chips and pickled peppers. He’ll take his over a couple of hot dogs, with squishy white bread for mopping up.
Turkey and Bean Tamale Pie - with ground turkey, pinto beans, corn, tomatoes, baby spinach, cilantro, onion, garlic, jalapeño, chili powder and cumin. The corn bread was made from cornmeal, APF, baking powder, egg, milk, butter and honey. Finished with a dollop of mascarpone.
It was a good Monday. Another nice evening. Pork ribs on the smoker . Pinto beans , with bag salad. Yes im glamping . Muffin the horse got her carrots. Blue jay built a nest on my ladder . I talk to her . She’s only six feet off the ground . Snooper the raven is high up in the tree . Waiting for me to go in . So to swoop and grab snacks. Yea i live in the forest . A bear got into my freezer and the garage last weekend forgot to shut the door .It ate the fish filets I didn’t like … cheers.
This is my newly learned “weight loss dish”. It involves stewing shrimp, chicken breast, broccoli, carrots, and other ingredients together in a pot. Compared to boiling with water, the method of stewing can maximize the preservation of food nutrients, and the taste is very similar to that of roasted vegetables. It is fragrant, crispy, and particularly delicious.

We had a buddy over for dinner on the patio. I made spicy shrimp scampi with Aldi black tiger shrimp, Aleppo pepper, lemon zest & juice, TPSTOG, and fresh parsley for our antipasto.
The last package of Talluto’s Phuldulphia pillowy ricotta ravs with Priano arrabiata, and of course a ginormous salad on the side. Duh. The pasta wasn’t particularly photogenic, and you’ve seen my salad pics a million times.
The shrimp came out great, will have to make again. And that Aldi arrabbiata has a serious kick to it - rather surprising for a commercial sauce.
