I’m not a fan of eggplant, but this looks particularly appetizing! Maybe because of the prosciutto and balsamic glaze, but still…
Could easily sub grilled chicken or a fried cutlet for the eggplant. Or ditch them all and go with a nice tomato. I like to do that in the summer (with some shaved red onion)-- it’s a light sandwich.

Lamb “souvlaki” - thinly sliced leg of lamb in an improvised Greek-inspired marinade made of semi-dried cherry tomatoes (that I left too long on the counter so they shriveled up like raisins), onion, garlic, green olives, fresh thyme and oregano, s&p, olive oil and red wine vinegar, all blitzed to a paste in the food processor. I threaded them onto skewers (bunched up) and tossed onto my flat top griddle for 2ish mins per side for medium-rareish. Tzatziki and sauteed asparagus alongside. Sorry, no pics.
Marinade imparted fabulous flavor in just two hours, but next time I would leave overnight.
One of those “I have chicken but I don’t know what to do with it” dinners. Looked in my pantry and found a bottle of Schlotterbeck & Foss Caribbean Mango Sauce. I had an Ataulfo in the fridge, so why not try it out?
Well, THIS worked out well! Spooned a couple of Tbsp over top of the b/s chicken breast and baked for about 35-40 minutes, basting twice.
Leftover rice pilaf and steamed thin asparagus spears alongside, with some chopped mango on top. JUST the right amount of sweet heat for me. Of course, no idea where I found it…maybe Whole Foods?
There was wine, like DUH.

For tonight’s pan roasted monkfish loin preparation, I experimented with a new sauce/topping by making some interesting tweaks to a proven and trusted recipe.
My funky and new fusion approach: EVOO, butter, minced garlic, Anchovies, Capers, citrus zest, sun-dried tomato paste, Sake, Mirin and chopped parsley.
Surprisingly tasty end result!..Michelin star candidate with some fancy plating?! Ha!
Nice weather today, I did yard work, rewarded myself with a g&t. Dinner was shrimp tacos, cabbage slaw and chipotle tartar sauce. Doctored up canned pinto beans with jack cheese, avocado and radishes. Triple sec, oj and tonic to drink.
Friday night . 7 : 30 pm 72 degrees . Waited 6 months for this . Going fly fishing in the morning. The neighborhood frogs and toads are putting on a symphony at the moment.
Hamburgerl sandwich grilled , I like my burger somewhat rare .Pinto beans and bag salad . Cheers.
Monkfish - Part Two
Roasted Bacon wrapped Monkfish Loin with Wasabi Mayo.
Crispy savoury and salty wrapper, chewy, super-moist and juicy meat. The use of the tangy Wasabi mayo dip helped to cut the greasiness. A great, yummy and easy to execute success!
Potato, bacon, and caramelized onion pizza with a lemon-rosemary crema underneath.
Should have tossed the chopped half baked tater with light oil and some s/p, and drizzled some more crema on top before sprinkling with mozzarella and grated Parm-Reg and/or sprinkled some freshly minced rosemary on top, but it was good!

I suck, totally forgot to take a picture. #1 son texted me late afternoon to request Halal Guys chicken for dinner. Since we had Costco chicken schwarma in the fridge, I cooked that up (extra fresh oregano, garlic, and schwarma spice added) along with rice and HG white sauce. Last night‘s salad with blue cheese dressing also made it to the table. Pretty decent and far more economical than 4x take out meals from local Halal Guys
Quick and easy dinner tonight following a busy, summery day outdoors.
Sauteed garden kale with garlic and red pepper flakes, oil-roasted tomatoes (some of the last of 2022’s from the freezer), a glug of wine to the pan, penne pasta and lots and lots of parm.
We enjoyed another sensational dinner at Bistro D’Azur in South Orange, NJ, including an awesome duck confit salad with Humboldt fog cheese, apples, and walnuts; lobster crepe; steak frites; whole branzino; Spanish chips. It all went great with an excellent Syrah and cabernet.
90 degrees today, it’s cooled off to 70. Petite bacon wrapped tenderloin, seared in cast iron with butter, garlic and thyme. Didn’t want to fire up the grill for such a little steak. Sides were horseradish, Washington asparagus, little gem wedge with blue cheese dressing, red onion, tomato and bacon. Beefeater rocks.
I’m dog sitting, she brought her sleeping bag.
