What's for Dinner #8 - 4/2016. The April Flowers Edition

We were just saying that it’s been WAY too long since we used our smoker. And, IMO, are one of the best things to do in the smoker. Is there a particular rub you like?

I used a Dizzy Pig rub. Red Eye Express
Bark is not as thick as it looks but the rub did have sugar as an ingredient as well as coffee

WFD: ~ Bison Burgers, blue cheese, grilled onion, grilled tomato, lettuce, spicy mustard. Crusty round rolls, grilled inside.
~ Tossed salad, Romaine & iceberg, radishes, cucumbers, tomatoes. Blue cheese dressing.

Another stunning day in HV, and it looks like the trend will continue for the coming days. While I LOVE not freezing my tits off anymore, it doesn’t make for busy shifts… everyone’s going out to enjoy the sunshine — plus there’s that stupid B&W game today. Let me just say I was glad to end my shift when I did, since 75% of the students & alumni are well into their drinking schedule & bound for downtown to create the usual mayhem.

Our band has a gig at the cute lil gay bar tonight – should have a good crowd. So, there’s a positive side to the town being swamped :smiley:

Just like Gio, we gotz borgerz on the brainz @casa lingua: cheeborgerz from the grill (sharp cheddar, mayo & ketchup, lettuce for me; provolone, ketchup & mustard, lettuce for my man). I’m a little salad-ed out, and there was corn at the stupidmarket. Since we’re already eating with our hands, an ear each will be on the side, slathered in butter & covered in sea salt.

Good basis for upcoming martinis :cocktail: :cocktail::cocktail:

We were out house hunting (!!!:grinning::scream:!!!) today and stopped at a local brewery for lunch - fish tacos and bacon cheddar dogs, both good. Also a Ginger Rooiboos beer for me and a Saison for DH - I’m not a huge beer drinker but this was quite enjoyable. We’re keeping with the bar food trend for dinner and having Buffalo wings!

Last night was a farewell party for a coworker who’s going into the Navy. Started at work with cake (Anchors Aweigh!), beer, and wine. Moved to the bar next door. :slight_smile: Today, I was supposed to go to the family/friends farewell at her parents’ house - couldn’t make it - woke up with the schnufflies, and they didn’t get much better through the day. Last thing I wanted to do was make her sick(er - as she already had strep diagnosed a few days ago!), so dinner is at home. I did take a nap after my errands. Naps are always good.

Brine for a couple of pork chops:

2 cups apple juice
1 cup water
1 Tbsp. dried rosemary, crushed
1 Tbsp. whole peppercorns, crushed
2 Tbsp. kosher salt
2 tsp. ground sumac
2 tsp. Aleppo pepper

Drained, rinsed, patted dry, and oiled up with olive oil. Re-seasoned with Aleppo pepper and grilled for a few minutes on a hot grill pan. Into a 350° oven with a bit of a mixture of apple butter and white wine spooned over until they were done.

A mega-sized sweet potato was peeled, cubed, and steamed for about 15 minutes. Into a roasting pan, tossed with olive oil and ground sumac, and roasted in the convection oven @ 375° for about 20-25 minutes, turning occasionally.

The rest of some asparagus was steamed, tossed with butter and dried lemon zest and dried thyme.

There WAS wine. Gotta burn out the cold or whatever’s doing it’s stuffy dance inside my head.

Roasted Poblano Peppers, stuffed with pulled chicken, sweet potato, carrots, onions in a spicy picante. Served on a bed of traditional black beans, topped with some cooling sour cream. (They also had yellow and orange peppers on sale so I mixed it up a bit)

Crazy busy at work the last few weeks - and also we had a long weekend in Lille (food bits of which will be reported on the Europe Board) watching a friend take part in a cycle race. Last night was pork fillet with apples and cider (Nigel Slater recipe) followed by plums halved, then lightly dusted with granola and butter and roasted. Tonight it’s all new - there was a supplement in yesterday’s Guardian called Easy Ottolenghi recipes (!), and from that I will be doing roasted cauliflower with chorizo and kale and broccoli with lime. I’ll let you know how it goes. Lovely day here - just on way to the allotment to plant the potatoes.

Greek chicken from the grill tonight & mixed salad with a lemon-cream dressing.

BISO split breasts will be marinated with oo, lemon juice & zest, oregano, rosemary, thyme, paprika, s&p.

I’ll have this after work – another late dinner for me.

It’s a Sunday…this is long over due. Notice the wooden spoon an essential piece of equipment to make a proper pot of gravy. Even though I’m only half Italian it was my mothers side, so I was raised Italian. In an Italian family the wooden spoon is a cherished item and it is passed down from generation to generation. Sadly my grandmothers wooden spoon was broken in a terrible accident by my mother as she hit me over the head with it when I was 17 years old.

Was busy all weekend, indulged quite a bit, however.

Took almost 6 hours (checking, basting, adding beer to the tray etc). Tamari, 5-spice, sherry, sesame oil, some salt. I think that’s about all. Beer was Westmalle brown.

I ate asparagus whilst this was in the oven. 1.5kg raw, costs eur.23.

Pork but tasted like Peking duck.

Raw shaved sparagus salad with snipped chives instead of cucumber. Why not, I have asparagus and no cucumber in the house.
