One pan meal in CI skillet . Chicken leg and thigh nicely browned with some added anchovy , garlic ,capers , and a sprig of Rosemary . Halved small new potatoes sautéed and along side of them cut zucchini rounds .
Disposable works. Depending on how green you are
There’s a dominican steam table place in my neighborhood and surprisingly their soupy beans are vegetarian (haha, i asked no less than three workers in spanish!). On lazy nights i get this huge container of the beans and yellow rice that is just $5 and easily three meals
Tonight was a version of shashuksa- instead of any bell peppers i added cubed eggplant and went with firm tofu which absorbs all the yummy flavors. I forgot some good bread to soak up the sauce ;(
Good pita would do the trick

WFD: ~ Pork Chops with Coriander, Cumin Spice Rub. Toasted then ground coriander and cumin seeds, minced garlic, olive oil. The chops are seasoned with S & P then each side is rubbed with a paste made with all the ingredients. We’re using thick bone-in pork loin chops that will be cooked on my vintage cast iron skillet. Each serving will garnished with chopped cilantro leaves, but I suppose parsley can stand in for those who have an aversion to cilantro. [Ahem] We’ll save the bones in the freezer till we have enough for stock.
~ Eric Ripert’s Melted Cherry Tomatoes. Olive oil, shallots, garlic, S & P, cayenne, cherry tomatoes halved, good red wine vinegar, minced parsley. After the main ingredients are sauteed and tomatoes have and shallots have caramelized the skillet is taken off heat, vinegar added, and the mix is stirred to combine everything. This usually takes 15 minutes or so. Sometimes I include Kalamatas and a few capers. Minced parsley garnishes. This is kindasortalike a relish and tastes great over potatoes, and/or fish.
~ Baked Potato. Regular ole fashioned baked potato. I like cultured butter, S & P, sour cream, minced garden chives. (fun to garnish with a pink chive blossom but it’s too early for that now.)
After a lousy night last night which resulted in no dinner and on the eve of a big meeting tomorrow, I decided to treat myself. Great looking NY Strip finished in a bath of butter, olive oil, garlic, basil and rosemary. Accompanied by sautéed broccoli and creamed spinach.
Seasoned shaved steak + caramelized onions + slivers of mozzarella cheese + toasted potato bun = sort of a cheese steak sandwich + potato chips = Dinner.
Last night was out with a coworker for wine and a light dinner - I had a salmon burger and fries. And a glass of wine.
Last night was some very boring chicken and kale sausages by Premio - a new item from Costco that I probably won’t buy again. They were ok but very bland - luckily the pan roasted cherry tomatoes and garlic I made along with them helped. Side of Buffalo roasted cauliflower, which is my husband’s most favorite vegetable preparation ever.
ETA: tonight I was too lazy too cook, so I’m eating cheese. Just cheese.
