What's For Dinner #65 - the Brand New New Year's Edition - January 2021

You’re very welcome. I’m always interested in what led someone to make something. Sometimes it’s in a good way and sometimes it’s more like “Really? THAT’S what you made?” Hopefully no one knows which is which.

Oven baked roux. Hoping to hold out for brick, or at least milk chocolate color. Never happens.

Gumbo, baby!

I wanted chicken.
I wanted feta.
I purchased BS chicken Thursday night.
Already had feta.
Added baby spinach to the Thursday purchase.
Looked on Friday for recipes.
Found this one.
Pretty good!

Served on leftover orzo. Oh, there WAS wine for the sauce and wine for the cook. That’s an easy bet.

This is the Print version so you don’t have to scroll past the blog blah-blah-blah.

No cooking tonight. I bought some really good bread from Du Pain et Des Idées, 48 hours of fermentation and with a nice smoky crust and we ended up eating and eating just the bread, not even any cheese or prosciutto. I bought also a milk bread with cumin, walnut and honey glazed, it was lovely too.

Last night I started off cooking a dinner, and ended up with 2 instead.
Veal rib in a beef sauce, miso mashed cauliflower, mushroom and black garlic. Recipe from my favourite chef, Antonin Bonnet. The sauce took me the longest to make, 2 hours? Browned beef shoulder cooked with tons of onion and garlic in chicken broth. In the end, the onion beef stew ended up as a delicious meal for lunch today.

A few Chinese meals cooked in the week.

Crispy sesame chicken

5 spice braised pork knuckles

Detail and recipe

Also made Dongpo pork v.1

Lovely smoked haddock potato soup for the Monday Burns night!

I have no idea how big it is in reality. I bought 1kg / 2.2 pound and it’s only a stripe of it. I guess it must be at least 3kg / 6.6 lb.

I stayed at a hotel across the street from Du Pain et Des Idées a few years ago and bought myself a treat each morning - amazing breads! So jealous!

I bought also a flan and some escargots but the bread is the best!! Actually I got myself the book, and now I’ve the recipe for the home version. Needs 4x kneading and at least 24 hour proof.
