What's For Dinner #58 - the Uncertain Certain Summertime Edition -June 2020

Thanks @mariacarmen! Must say, it was very tasty, and perfectly done for a shoulder. Not a shred of meat left, as it was quite small. I meant to go after the marrow, but totally forgot. Think H saved for stock, as we always do, however.

Tsardusted bone-in pork chop was seared in olive oil and butter, then removed to the oven to finish cooking. A handful of minced onions added to the oil/butter mix until translucent, then a half cup of pork stock, and reduced a bit. Added a healthy pinch of Herbs de Provence to the liquid, reduced some more, mounted with butter, and spooned over the sliced chop.

Israeli couscous and broccoli alongside. Along with a Thursday glass of wine. It’s not Thursday, you say? Oh yes it is. I have Friday and Monday off from work. So two four day work weeks in a row warrant a glass of wine.

Tonight was cheeseburgers, salad with homemade Thousand Island, and (not pictured) tater tots and creamy cole slaw (re-dressed leftover).

It was good but honestly, I’m kinda over ground beef right now.

We are in the middle of a heat wave in NYC - temps close to 90 today. I was planning to fire up the charcoal grill but was too lazy by the time dinner rolled around, so I cooked my flank steak on the indoor griddle instead. Served with garlic scape pesto, Caesar salad and maybe the best potatoes I have ever made. I cut red potatoes into 1/2" chunks, salted well and steamed them in the microwave until tender, then fried them until crispy in chicken fat (a LOT of chicken fat). Added a tablespoon of chopped fresh rosemary and thyme right at the end, so the herbs just bloomed in the hot fat. Absolute perfection.

Tonight’s dinner
Steelhead and scallop pan seared in butter with an orange butter sauce and braised radish and zucchini. The vegetables were over braised on purpose. Have a hernia surgery sch. in 5 days and it’s been raising havoc on digestion the last month. Eating has not been fun. So far so good :crossed_fingers:t2:

Haha, definitely the former, despite the fact that I’m not much of a gin person in the first place!

I would definitely do an English garden right now if I had the stuff on hand, don’t get me wrong!

Was going to do chicken piccata with sautéed chard. But, the sauce was a bit to tart for DH so I added a pour of cream and grated in parmesan, and lots of pepper. Turned out really good. For some reason, my 13 year old dog has decided to camp out under DH’s armpit during our meals. :thinking:
