What's For Dinner #40 - 12/2018 - The Hearth and Home Edition

Gorgeous chop!

gracias!

Beautiful cake! I rarely make cakes from scratch but perhaps I should give it a try!

Husband was supposed to pickup eggplant parm sandwiches from around the corner but they were closed for a holiday party. So at 7:39 PM, I whipped up a super fast dinner of quick cook brown basmati rice from TJ and a chicken/broccoli stir fry. Dusted the chicken in cornstarch and made a fast sauce with soy sauce, rice vinegar, siracha, garlic powder, ginger and brown sugar. We were sitting to eat at 8:01 which might be a record in my book.

Is your kid no longer sensitive to baking powder/soda? As a keen baker you must have faced some challenges. It’s made you think about alternatives and adapted. That’s love.

Whilst I don’t really have any dietary restriction I’m sensitive to a few things, including baking soda. I can even taste soap on crockery and cutlery. Also taste chemicals used in some frozen seafood and other food products. The taste is most unpalatable.

I like your chops!
I of lately always brine my pork chops…really easy, as I am sure you agree and fantastic results…Well worth the effort.
PS is a “metric tons of butter” as much as a “shit tons of butter”? (lol)

Impressive!

Yes, she’s still sensitive, but much “better” than before. I was so worried before, like oh my God, my kid doesn’t like blueberry muffins. What am I going to do? It took a while to diagnose what it was. It was actually an accident. I forgot to put baking soda in a banana bread, had left it for it to be thrown away, and found her devouring it like she never had sweets before. I had the same issue with soap-y tastes – and various textures – when I was a kid, so I was able to guide her palate along gently. The frozen seafood soapy taste drives me nuts till this day. Recipes with a lot of baking powder/soda still bug me. It took me forever to make biscuits that aren’t dense because I can’t tolerate the couple TBSP baking powder called for in recipes. But I actually love cilantro now and my kid is starting to like it. As for actual soap, it drives me nuts when people don’t wash soap off dishes and cutlery. When no one is looking, I’ll wash all the soap off my nieces’ and newphews’ sippy cups so they will drink their water. (I once took a sip when my kid was using a cousin’s sippy cup and wouldn’t drink her water.) I gave up trying to explain that kids’ palates are very sensitive and soap isn’t yummy.

yep, same thing! The old proverbial shit-ton. I’d used that to describe it elsewhere, so I thought I’d change it up.

dinner was rushed as my car was not ready till almost dark. Found out the shop used up most of my gas in test driving it for a week. So, went to HT, bought sweet potatoes and Sandra’s Frozen Chicken with cream cheese and Jalapeno - oven for 30- 45 minutes until temp of chicken was 160 degrees. ( chicken is chicken breast, uncooked no hormones antibiotic )Very decent, I would even say good . Am going back out to stock up as it is not easy to cook for 2 with both of us eating different entrees often.
Son had 2 pieces of strap venison ( he will not eat cream cheese) that I rubbed some pollen ranch’s fennel pollen for pork ( do not have for venison) , seared in coconut and olive oil, then finished off with butter.
Also stir fried Swiss chard with olive oil, garlic, (stem first) then added soy sauce, cidervinegar, balsamic vinegar and pollen ranch’s fennel pollen for vegetables ( Zensational) .
Pictures are lost but they taste good
Dessert for me would be fried plantain fried with olive oil and butte, brown sugar and a liquor , not decided which one yet ( have to wait to clean and dry cast iron used for venison as I am not allowed to contaminate my food with red meat so dessert will be later when I feel like cleaning and drying my cast iron. )
One thing I found out abut Sandra’s chicken is that it is made by Maple Leaf Farm, the same company that I buy their half duck with orange sauce sold by Costco. I called them and was surprised that they have lot of stuff, duck sausage, ground duck meat, duck bacon, duck strips for stirfry or other stuff , duck dim sum, duck quesadilla, etc . Customer Service explained that if I am Costco member half duck is cheaper thru Costco (I always have them I my refrigerator) but the price for shipping is reasonable up to $100.00 . They are not shipping now but to order after Jan 1. Shipping is not as expensive as D’Artagnan’s. I have already loaded up my shopping cart as I am really tired of chicken chicken and chicken!!! Too bad they do not have duck pastrami! HT carried the Sandra chicken in different flavors ( with broccoli and cheddar cheese, with apples , cordon bleu etc)

I got home from a gig late on Sunday and had cheese and charcuterie for dinner just so I wouldn’t be stuck in the kitchen cooking while it was on. Even did my usual Lonely Goatherd sing-a-long despite having a cold!

I use a natural, non-toxic, unscented dish soap for that very reason. Bleh!

LOL…!!! almost peed in my pants…

FYI…the Mrs has the same issue with soap…soooo after she washes all of the dishes they go into the dishwasher to be processed on a “normal” wash with no dishwasher detergent…
I hear you and never thought it was real until I lived with someone who has a real issue as you note…

Thanks for the tip on the Sandra’s chicken products, ccj. I might just have to pick up a couple to stick in the freezer for a quick meal. The website shows some tasty combos.

they have buy one get one free at our local HT yesterday, so I have another package reserve.
'I called HT today , the sale ends 28th so instead of rushing there today, I will wait till Thursday when I go to Gaithersburg for an appointment, visit Costco at least 10 of these packages of what is available ( excluding cordon bleu, never liked cordon bleu esp cannot eat red meat now but do like Kenji Lopez 's Serious Eat’s recipe almost similar but really great without ham but with mozzarella and parmesan and the best tomato sauce as he calls it.
Hope u like it.

Funny thing, I will often do the opposite. Wash in the dishwasher, then further wash in the sink with hot water.

Tonight we had salmon ochazuke with black bean and garlic gai lan. Condiments were pickled daikon and ginger, furikake, togarashi, and Japanese kimchi.

dinner tonight was simple and fast
Costco’s marinated salmon, reserved marinade , pan fry, ( son does not. eat skin so I removed the skin, placed it on my plate to eat with my baby Wolfie. Luna does not like salmon skin but Wolfie has gained 7 ounce since returning from Europe so he had onyx small portion. Wolfie is always hungry, looks at me with those eyes that I cannot resist sharing my food with him. I have to start him on a diet after the holiday )
To the same skillet, add more olive oil, presoaked cellophane noodles, add the reserved salmon marinade plus 1 tbsp of gochuchang, cooked until the marinade was absorbed, then left it a little longer to give it a crunch crust which the Chinese calls 'BURNT PEEL,"

similar to the socarrat of paella. This was served with lemon on the salmon and Lo Gan Ma’s chili crisp on hoof the cellophane noodles.
My son started eating his while I was getting my camera so, only showed my dish ( also gave him part of my salmon as I am having fri ed plantan before I go to ed.
