Fish friday (and dumpings). Made with raw beetroot this time (last time it was first cooked). Much muuuuuuch better. The colour is so intense with raw beetroot. Fish was seared. After 3 weeks the price of Skrei came down a little bit (was eur.32/kg, today eur.30. The piece I got today was 405gr (about 1lb).

Except maybe having the helicopter hover right over my townhouse for a minute or so. I’m pretty sure I didn’t do anything wrong on the way home from Wegmans, but you never know.
Dinner was pan-seared sea scallops with lemon-wine sauce and toasted panko crumbs; herbed orzo, and steamed asparagus.
There was wine. 'Cause, like t’was a major DUH.
This week. What a gong show! I’m on call for the weekend so I’ll not be rid of work problems.
I managed to cook a fair amount despite long days and constant phone calls.
I made some lovely beef stock which I turned into French onion soup over the course of the week.
Small chickens were on sale this week, so I ended up buying two. One was just roasted with garlic, salt, pepper.
One night was just chicken soft tacos with store bought corn tortillas. Haven’t had a chance to try out the tortilla press yet.
I couldn’t sleep at 3am Thursday night, so I got up and made a meatloaf that my husband could throw in the oven, which turned out to be a great recipe. Served it with double veggies- steamed broccoli and steamed peas. Threw some toasted pine nuts on the broccoli.

Salsailsa, I should do some cooking if I wake up and can’t go back to sleep! Happens all the time, but I toss and turn and think about stuff, and am worried about nothing. All that stupid crap!
We don’t usually eat the same thing 2 days in a row but couldn’t resist the price of this Skrei, only 1/3 of what I paid yesterday. I had to do the scaling and filleting myself. I used the thickest part for sashimi and the rest crisp-fried (no fish & chips kind of batter). The half fish is 1.2kg, but of course there are bones and skin, not to mention water. Extremely fresh and I trust my fishmonger so it’s a steal at this price.

It was new to me. I’d make it again-
I didn’t use the oatmeal though. I used white bread soaked in milk and crumbled for moisture.
I also used just beef as I didn’t have any pork. Very juicy!
Last night was out to drink with coworkers/friends once we finally left the office around 8pm. Yup, a real winner of a week. I had my two lovely moscow mules and we shared some silly flatbread veggie thing and a crudite with dips. An apple and nut butter at home for dessert.
I made this farro olive salad this afternoon for “linner” (lunch +dinner around 4:30) i was thrilled to come across some fantastic olives on markdown at the store since you need a pound for this recipe. I skipped the jalapeno and chives since the store was out and used the oil the olives were packed in for the dressing , prob just three TB worth. I added in some cubed smoked tofu too.
Really tasty and a great mix of textures, i’ll bring leftovers for work lunches
Probably not the weather to heat up the kitchen, but I did.
Boneless pork loin roast marinated in sour orange juice, honey, lots of garlic, s/p, rosemary, thyme and parsley, then roasted (with the strained garlic & herbs spooned on top during roasting); roasted potatoes, and sauteed green beans and red bell pepper (tossed with Penzeys Sunny Spain seasoning, and ground sumac). And some homemade applesauce.
Wine. And Lemon-Ginger Posset with blueberries, raspberries, and blackberries for dessert.
And Kitty Wrestlemania during the morning routine, since Alfie wanted the bathroom sink, but Buster had previously laid claim. Neither won, as my laughter at the Krazy Katz startled them and they scrambled out of the bathroom.
6 oz veal rib chop cooked in ci skillet . Simply salt . Mixed green salad with oo and vinegar . Small chunks broken , not sliced pieces of white potato . Apparently a new method for me that they won’t stick together fried in oo . I have a little bottle of truffle oil , just a drizzle when finished . A bottle of wine to drink . Cheers . Happy weekend .
Oh, thanks so much, Salsailsa! I Like the idea of using oats. My childhood meatloaf uses cornflakes, which add a subtle flavor. I’ll add it to my short list

Late lunch, early dinner was Mexican food before a bit of antiquing. We shared this guacamole topped with bacon, cotija cheese, grilled corn, and pepitas. Filling and a nice change from basic guac.
And, I found this little lamp for the new kitchen. Touching the dog turns the bulb on, up a level, and off.
