T’was a nice day spent antiquing in Gilmanton and Concord, NH. I had no breakfast or lunch, so I was STAHVIN’. And had a craving, one that was not to be denied. Unfortunately, I hadn’t taken out the appropriate package of meat from the freezer. So a quick stop at MB on the way home provided the makings for meat loaf and mashed taters.
Penzeys Old World seasoning, an egg, Panko crumbs, and about two Tbsp. of roasted garlic were mushed together with ground beef, pork and veal (MB doesn’t package a “meat loaf mix”, so I had to buy separate packages of each - used a half package of each - the rest was frozen for another meat loaf). A thin schmear of roasted garlic was spread on top and into the oven to bake.
Yukon Gold taters were boiled, mashed, augmented with an obscene amount of butter, some salt, pepper, and heavy cream. And there were peas. Because Meat Loaf Law demands mashed taters and peas. Slices of meat loaf had caramelized onion gravy pulled from the freezer and reheated spooned on top.
Wine while mushing, cooking, and eating. The oven being on for some time also heated up the house, so I still don’t need to turn on the thermostat.

I’ve never had potted shrimp but am inspired to try a recipe.
Best dinner in weeks. Baked and then grilled ribs and steamed then grilled artichoke. The ribs were rubbed with a mix of salt, pepper, dried mustard, smoked paprika, and cayenne, then baked for 3 hours. DH found a spicy Korean BBQ sauce called “We Rub You” at the store and it was awesome. Ribs were basted and then grilled.

Unexpected dinner on the train today because well we were supposed to arrive around 5pm but there was a broke-down train on the same track somewhere in front of my train. It took some time til they got it out of the way as it was in the middle of nowhere. We came to a grinding halt in the meantime. Finally pulled into the station in Winnipeg at 8pm, got to my hotel shortly before 9. Now I can rest in a soft bed, finally, after 48 hours straight in the train (though I had a private 2 person compartment with bunk beds, private sink and toilet etc).
Anyway, they still got enough food to serve dinner but I had to eat the salmon one more time which we didn’t mind. I was looking forward to eating dinner in Winnipeg but the train delayed happened. And they say it happens all the time.

The scenery on the way back from Churchill is quite different than when I came with the train from Toronto (to Winnipeg). Lots of snow.
Thompson is a one horse town, where we stopped for 2 hours.

Left my book behind in the room last week, mailed the hotel the next day, now I’m told they found no book. Only the housekeeper knows, I guess.
Unfortunately, I have to get up early for my flight back to Montreal tomorrow.

Dry stone walls are very common in rural areas of north west England. A true skill to build them.

They’re all over Ireland’s farmlands as well. Clearing the fields and setting boundaries, they needed to find a use for the field stone. The knowledge was definitely brought over from those who emigrated to the new country. And northern New Jersey seems to be the dividing line as to where most stone walls stop, as it goes back to the glacial line of demarcation. As I said - I’m fascinated with them.
It’s actually too early for us by about 2 weeks. Lloydminster, Saskatchewan. 2.5 hrs East of Edmonton, Alberta and 3hrs west of Saskatoon, Saskatchewan.

I’m still hitting the grill hard. The weather is phenomenal here. To me it is still local summer. I cooked two burgers… one for brunch and one for dinner yesterday. One was over cherry for brunch, which I overcooked, and one over pecan for dinner.
You know Psunto you have to look on the bright side. It could have been worse.
At least it was cold enough up there to kill all the black flies.

Started a quick chicken stock/broth this morning on the stove top to use in a soup tonight. The afternoon was spent watching a great Patriots game…TB12’s first home game since the suspension. Lookin’ good. Hell, lookin’ GREAT.
Soup tonight was sausage, white bean, and kale soup - sauteed carrots and onions with garlic, couple of large links of sweet Italian sausage squozen out of their casings and fried, the about a cup of chopped tomatoes and their juice added, along with the white beans and the entirety of the chicken stock. The kale (from the freezer), some Italian herbs, Aleppo pepper, and a couple of small pieces of Parm-Reg rinds, and simmer-simmer-simmer until the soup was done. A sprinkle of grated Parm-Reg on top, a crusty buttered roll alongside with some wine, and it was dinnah.
I stopped into H mart yesterday afternoon because i’ve been craving those chewy rice cakes. Next thing you know i’m in the condiment aisle where i discovered that bulgolgi sauce itself is actually vegan! Nice. So for dinner i had some pickled daikon and a little prepared food thing of sesame bean sprouts, and some rice cakes and baby bok choy with that fabulous bulgolgi sauce- it was a touch sweet so i added a little soy sauce to my plate.
This afternoon i made the various components of this rice bowl- on paper it sounds like the most boring hippie health food meal ever (i happen to love that kind of stuff), but all together it was astonishingly good!! I didnt have sheets of nori so i just added an impressive amount of furikake. And i didn’t want to deal with a pomegranate so i just bought an overpriced container of just the seeds. Leftovers will be lunch for the next day or so
Last night was chili so tonight is going to be leftover chili, which might be even better! Last night’s pot included ground beef, chopped steak leftovers, andouille sausage, black beans, onions, green peppers, poblanos, fresh jalapenos, several types of powdered chiles and a paste of several more kinds of dried chiles that I had in the fridge. Not to mention beer, tomato paste, cocoa powder and some brine from a jar of pickled jalapenos. It was a good batch if I do say so myself!
It’s a couple duck breasts with salt and pepper trussed together . Hanging on string in front of the fire until crispy skin doneness . Rotkohl is a braised purple cabbage with onion and apple , sugar , cloves , juniper berries , red wine vinegar , and red currant jelly are added . Braised for around two hours . A German and Austrian favorite
