Veggie pizza. Basil pesto, four cheeses (parm, asiago, whole milk mozz, fresh mozz), and asparagus. Pickled peppers on top. Salad greens on the side.

I copied a meal @saregama shared: besan chilla (spiced chickpea crepes) with spinach raita and green chutney. I added spiced yogurt-marinated broiled chicken breast and seared shishitos with chaat masala and flaky salt. Very tasty. My DH actually prepped everything yesterday but we weren’t hungry, so it made for an easy dinner tonight when we have much else on our minds. The batter rested in the fridge overnight, but not sure it fermented.

Homely little dish I made yesterday turned out super tasty, and had a bit of heat. A mash-up of a few different recipes for chile verde chicken and potatoes: roasted onion, tomatillos, jalapenos, serranos, and poblanos, into the food processor, sauteed with fresh minced garlic, chicken stock, salt, oregano, cumin, a bay leaf, and a bunch of cilantro. Browned bone-in/skin-on chicken thighs, put them into the sauce to cooked through. Pulled thighs out, shredded and added meat back in with peeled/quartered potatoes until taters were done. More fresh cilantro stirred in after heating tonight, then EVEN MOAR cilantro before serving with a little crema. Garlicky rice made with chicken stock and yet even more cilantro. Had our noses running, nice and limey too. Plenty of leftovers.

Meatloaf (freezer stash), mashed potatoes and a very rich, gelatinous beef gravy with mushrooms (freezer stash) with baby peas (frozen) made for a very tasty but easy mid-week dinner. I have leftovers of meatloaf, mashed and gravy for two nights and will change up the green veg to avoid boredom (I will save you the repetitive pics).
