Dinner tonight was a hamburger casserole served over rice. I am still getting used to my new stove top since the rice (not visible) was a little overcooked.
Another weirdly warm day that became increasingly muggy, thx to rain that we’ll apparently be dealing with until we leave. Meh.
Not ideal for grilling the lamb loin chops my dude marinated yesterday before maladies showed up, but he did his magic as usual ![]()
The chops were perfectly MR, although we decided that Australian lamb is on the blander side compared to local lamb, or even the stuff we get in Germany ![]()
Thankfully, I’d made a sssspicy Sinatra sauce instead of the usual tzatziki to go with: TPSTO cilantro, mint leftover from the lamb marinade, a few cloves of garlic, 2 bird’s eye peppers, 2 anchovies, lime, a lil blob of sour cream, soy sauce, feta, olive oil — a casa lingua twist on Peruvian green sauce, if you will.
Just a BAS (sunny crisp, flavor bombs, English cuke, ½ an avo) with zesty mustard dressing on the side. We decided to ‘save’ the baby spinach for Thursday night instead when we’re having a friend over for dinner.

One of my favorite springtime dishes: James Beard’s Pleasant Pasta. Using frozen baby peas from the previous year’s garden, I augment this with just-picked asparagus and basil. Tonight I used a Niman Ranch uncured, applewood-smoked ham steak for the protein. A great way to tap into spring veg, and the whole dish takes about 30 minutes - including prep - to put together.
Dinners have been mostly salads after vacation - all made by the BF for me, while he ate other things. (I’ve gone out twice, too, since we got back.)

then he made me a cheeseburger salad one night! with homemade 1000 Island dressing and croutons. Cheeseburger for himself.
then an “Asiany” salad with fermented black beans and a little side of Chinese sausage rice, and another bowl for him. we were really into the Chinese sausage rice for a few days.
Sunday night he broke out the Tonkotsu ramen i bought at Tokyo Central - a new-to-us branch of a large chain of Japanese grocery stores here in the States, owned by the largest discount store in Japan, Don Quijote (affectionately known as “Donki”).
For a frozen product with packaged broth, this was delicious! The noodles had the slight alkaline taste we found in ramen in Japan, and the broth was nice and milky. BF marinated some pork belly to make chashu (which could have used a longer time marinating - flavors didn’t really permeate but it was still good.)

And tonight’s salad, with a bit of charred ciabatta - he wanted to toss it and make some more but I really don’t mind, and actually like, quite a bit of char.

Pad MAMA / stir fry with MAMA instant noodles, with mushrooms, green onions, garlic, carrot, onion, and chicken.
Red Lentil Dal with Eggplants and Tomatoes from essen & trinken magazine - dal is made with red lentils, onions, garlic, ginger, fresno chili, cumin, coriander, fenugreek and turmeric cooked in coconut milk and vegetable broth. In parallel, you pan-sear Chinese eggplants until they start to brown and add some diced tomatoes. The eggplant-tomato mixture is added to the dal and finished with lime juice, cilantro and thai basil

I’ve thought the same thing for awhile now. Colorado lamb is usually lamb-ier to me. But yours looks SO good! I’m assuming the marinade is oil, rosemary, mint and garlic?
