Cashew chicken from https://www.eatingthaifood.com/thai-cashew-chicken-recipe/. I’ve made this so often I don’t need to check the recipe any more. It always hits the spot. Served with sticky rice.
Made a quick fried rice dish with the leftover mango-pistachio rice from the weekend and chopped leftover green beans from my chicken dinner this week.
Added some frozen corn, minced garlic, teriyaki sauce, s/p and a single whupped egg (which kind of got lost in the mix
). Drizzled with a bit of toasted sesame oil, and topped with chopped green onions and more chopped pistachios. Because why not?

Tonight I made ground pork tacos al pastor (adding a dried pasilla to the sauce) on flour tortillas with the usual accompaniments. Broccoli her way (overcooked) with lemon olive oil and flaky salt served on the side. I grilled the pineapple and some onion separately and mixed into the meat at the end; would definitely do again.
Went to Sam’s to fill up the tank & stock up on MOAR fruit — ‘nanas for my dood, those luscious honey mangoes, golden kiwis, and Cosmic Crisp apples for both of us.
With probz 1.5 cups of that wonderful Hungarian mushroom soup leftover I decided to make a kicky chicken Geschnetzeltes with chicken breast I sliced into strips and seared well in rendered bacon fat along with a diced onion and sliced red & green bell pepper before adding the shroomy goodness & more fresh pahslee. Genius, and plenty of leftovers to look forward do ![]()
TJ’s boxed pilaf for a lazy carb, and the requisite salad: sunny crisp, flavor bombs, Persian cukes, avocado, buttermilk ranch.
Chicken and pork Tsukune meatballs with added zucchini and glazed with tare sauce. Cukes in vinaigrette. Steamed rice.
