So I had a shrimp salad for dinner.

Pan seared pork on a bed of sauteed romaine with dice tomato, scallions, carrots and tons of garlic with a pinch of dried oregano.

A thick boneless center cut pork chop seasoned with olive oil and a mix of homemade Baharat seasoning and mango powder (the latter a gift I got years ago but is still viable). Roasted at 350° until done. Definitely overcooked. ![]()
A quick “sauce” of sautéed chopped onions and minced garlic, pork stock added, reduced, and then mounted with cold butter and seasoned with s/p.
Basmati rice with chopped Ataulfo mango mixed in at the end, and chopped pistachios on top.
Sautéed green beans, sliced carrots, and red bell pepper with dried marjoram and s/p.
There was wine.
They were a real treat to see after all the gloomy weather we’ve been having lately.
Thank you for sharing. They are an absolute delight. Gloomy weather is coming back to New England so it’s good to see that Spring is going to eventually get here.

Dinner was an easy affair of some of last night’s LA roast with rice I turned into my latest obsession, i.e. garlic rice, the leftover veg, and a salad.
I’m kind of out of it today, nothing is wrong – but I didn’t feel like cooking dinner. So I boiled some pasta, opened a jar of Ragu and microwaved some frozen meatballs.

Refrigerator clean out of brown food to be replaced by large artichokes on sale. Found out my local grocery store switches to self service check out after seven and I’m not sure if that’s only Sunday or not. I’ve been shopping there five and a half years and I’m not a night time shopper obviously. A lady took pity on me and opened a lane as I had alcohol.
Also, I live in a retirement community that requires all cats to be kept inside. I was out back cleaning up after a heavy rain storm last night and I heard a thunk. Looked up and there was a cat on my fence checking me out. Finally the cat distribution program had come to my house!! It left, though, so I’m still single.

Bacon and Egg Detroit Style Deep-Pan Pizza from Peter Reinhard’s “Perfect Pan Pizza” - second recipe from this book and it is becoming one of our preferred pizza books. High hydration dough done with a few folds before left in the fridge for 24 hours. Using his dimpling method to stretch into the pans. Then you add half of the cheddar cheese as small cubes into the dough and let it rise for 4 hours. Topping is a “salad” of arugula, diced roma tomatoes with olive oil and balsamic vinegar, pan-fried bacon and more diced cheddar. In the oven at 500F for 8 minutes. Two eggs added and back in the oven for 9 minutes. Once finished, you top it with a little bit more of arugula mixture
Stuffed shells last night (from frozen), to which I added some tofu planks for more protein. Bagged poppyseed salad.
drooling! i still haven’t assuaged my rib eye craving…
that’s the prettiest meatloaf sandwich I’ve ever seen!
