Tonight I made chili-seared tuna tostadas with a homemade avocado-lime salsa, radish, avocado slices, and pickled red onion with a side of pinto beans and a green salad (not pictured) with leftover chipotle-honey vinaigrette from…Chipotle. Not bad for quick!
That sounds very spring-like with lemon and basil!
It will be carrot cake…the birthday cake that didnt happen thanks to the flu!

Haven’t had sketti and sawce in awhile, and it’s Wednesday, so Prince Spaghetti Day, it is!
And Finn was fascinated with the Artemis II launch.
I was absolutely stumped as to what to make tonight, and the weekly planning thread I consulted for my “plan” was grievously short on details: “perhaps we’ll toss something meaty on the grill or make a big dinner salad.”

I def felt like a non-meat meal between Monday’s chicken, yesterday’s snossidges, and the barilotti with lamb & sausage sauce from the deep freeze we have planned for tomorrow.
My boo was ready to get takeout, but Ima frugal bitch & went digging in our freezer, where I unearthed a bag of wild gulf shrimp from Aldi. Shrimp tacos FTW!
I made a quick guac with surprisingly perfect avocados we bought pacifically for this purpose (I usually buy them as green & hard as possible and let them ripen at home), lotsa lime juice, TJ’s bird’s eye pepper sauce, cumin, finely diced shallot, tajin, and plenty of Sinatra. We inhaled most of it with tortilla chips before the main event ![]()
A mango salsa we also purchased while out at the Jine was pimped with a local coconut hot sauce & MOAR Sinatra.
I fried up half a sliced graffiti pepper & 3.5 hot jalapeños and added them to the shrimp I’d seasoned with cumin, tajin, s&p before tossing in a hot pan shimmering with avocado oil.
This mix went on top of fried flour tortillas, with another perfectly ripe sliced avo to be added, along with the salsa, more coconut hot sauce, and MOAR Sinatra.
The salsa turned out to be too sweet & overpowering the shrimp, so we left it off our second tacos. Might be better as a relish / side salsa for grilled swordfish or mahi mahi, TBH.
While we really liked the flavor of the gulf shrimp, we much prefer the texture of black tiger shrimp — plumper, snappier, BIGGER ![]()

Marinated lamb kebabs, cooked under the broiler (too sloppy outside tonight to grill on the Egg). Not wild about the outcome (dry). To compensate: pita, raita, avo-hummus, Greek salad.

April Fool’s Day brought me cold, blustery wind and rain. The critters didn’t even come out of their lairs for breakfast.
BBQ pork country ribs from the freezer and onions on a buttered and toasted ciabatta roll; extra crispy ff garlic fries; cabbage slaw with a curry dressing. Hard cider.
After a month of sunshine and temperatures more common in Southern California, the Bay Area switched back to drizzly soup weather. So yorvarlakia.
Spaghetti with Porcini Pesto - dried porcini and dried tomatoes are soaked in hot vegetable broth before pureed with garlic, olive oil roasted almonds, parmesan, olive oil and lemon thyme. Served with spaghetti
It’s raining right now in the Bay as @ernie_in_berkeley mentioned, so its a good time to have a kimchi pancake. I’ve read that one of the reasons for this is the sizzling sound of the pancakes frying that resembles the sound of raindrops.
I mixed half a cup of Korean pancake mix, half a cup of cold water, half a cup of chopped kimchi, one chopped scallion, thinly sliced pork belly, and a little minced onion, and then fried up two medium sized pancakes. I also had some gyoza from the freezer and a can of makgeolli.
