For my Very First Sheet Pan Recipe, I went with this approximation of shrimp fried rice. I added celery, onion, carrot and fried egg to make it closer to what I wanted in a fried rice. And it was pretty good, although the rice really stuck like hell to the foil I lined my baking sheet with. Shown here with a smashed cuke salad.
I had never thought to dip meatballs! good idea!

I marinate longer, and roast in oven at 425. Sometimes freeze all or 1/2 of an uncooked, marinated, spatchcocked chicken - low effort dinner, just make the sauce while the prepped chicken roasts.

This recipe is really killer. My wife brought it up this morning first thing, saying again how much she liked it.
I followed it as to ingredients, but next time will increase the yogurt and spices. My broiler isnt the best so i used reader suggestions to oven roast some first, then just used the broiler briefly to get some scorch on.

Speaking of Super Bowl dinners, we were traveling and I had picked out a restaurant for takeout for the game that sounded really appealing as sports food. It was a well reviewed Thai fried chicken place where they serve it to you with sticky rice, lettuce to wrap, herbs, and vegetables in a dipping sauce. However, although their regular hours were until 9 PM, they inexplicably closed up for that day at 4 which I learned after getting a bizarre online delivery message from their website and calling them and then having to jump off of a metro bus before it got going from the depot. We only had a little bit of time to pivot and ended up with some very average Mall Food Court Thai noodles. On the other hand, the right team won, and my college student was able to go and be part of the victory parade a couple days ago.

Just using up a bit of additional PTO time I couldn’t use up last year and so was granted the additional rollover hours to the regular 40 hours of rollover that is allowed. I try and take PTO around our holidays to extend the time off.
Like the pictures of our critters on that ongoing thread, gorgeous views like @BeefeaterRocksSister’s makes me smile and reminds me that there is still beauty and love in the world.
