Tonight I made a loose interpretation of this slow cooker soup with butternut squash and sausage. I used chicken Italian sausage, subbed half and half and Wondra for the cream, and added diced fennel root, carrot, onion, garlic, celery, white beans, and chopped spinach. It was pretty bland so I boosted the flavor with red pepper flake, Better than Bouillon, and a little Italian seasoning. Topped with biscuit dumplings. DH liked it so he can have all the leftovers. Meh. One might argue that I didn’t really follow the recipe, but I don’t see how it would have been better – only greasier and blander.
Dinner tonight was Thai basil chicken minus the basil
Today was my work-in-the-office day so I ran over to the grocery store across the street from my office to pick up some basil for tonight’s dinner but they were out of basil. Not a problem I pass by another grocery store on the way home from work and they had no herbs at all today. Since I didn’t feel like spending the evening running around looking for basil I decided to call it a day and have my stirfry without basil. It was still very good.
Felt like an easy meal tonight: air-fried a nice salmon filet brushed with apricot chile crisp chutney, blanched the last of the baby bok choy & topped with a splash of urrster sawce and sesame seedz, plus nuked leftover rice.
We also had a bit of the Thai red coconut curry sauce left to lube up the rice. Easy peasy, super-pleasy ![]()
Homemade chicken noodle soup. Had a brain fart and bought tenders instead of thighs. I like thighs better but this was pretty tasty.

Chicken enchilada from the freezer. When I opened the zip lock I was surprised to find a packet of rice and a chunk of pepper jack. A perfect meal, how kind of me to do that for myself. Little gem, onion, tomato salad with jalapeno, cilantro dressing. No Margarita, it’s dry January.
Another shrimp bisque. The base was made previously (and frozen), with the addition tonight of seasoned and cooked shrimp. Herby buttermilk biscuits. Salad greens in vinaigrette not visible in the photo.
That plate looks excellent to me…the sear on that salmon is perfection!

Medium H wanted only one thing from me for the holidays, and I finally got around to making it for him.
What is it?
Pizza with sliced tomato and Greek sausage, Centos pureed tomato, mozz and romano, TJ’s crust. The sauce looked gloppy, like chain pizzeria sauce, but since it was only tomato and seasonings it was light and fresh. From the oven:

Craving some fried chicken for dinner tonight, so I waddled my arse down to the local Popeyes and grabbed a 3 piece combo with mashed and a biscuit. Crispy and greezy, just the way I likes it.. 14,000 + steps today, so I deserved all the calories
Looks good! About once a year I need to get my fix of Popeye’s - nothing else will do, and I love their potatoes with Cajun gravy! My order is always 3 chicken wings, and the potatoes, with a biscuit that comes with it. A Diet Coke with that meal, for sure. I eat all of it.
