Worked unexpectedly late. Was glad I had a portion of taco soup I could pull from the freezer, nuke, garnish and eat.

Turkey burger on grilled, seeded brioche bun. Swiss cheese, thick cut bacon, grilled red onion. Spread is smashed avocado, mayo, mustard, sweet/spicy pickles. Love iceberg and tomato on my burgers but that would mean a trip to the store. Escabeche veg.

Shrimp & scrambled egg. One side effect of my chocolate cookie project is leftover partial eggs. Today’s recipe - which I halved - called for an egg and a yolk. So here’s 3/4 of an egg, plus shrimp and scallion and rice.

I “mailed it in” tonight for dinner. Pasta with Alfredo Sauce (jar) and sliced brats. Green Beans on the side (not pictured).

Lentils with Tofu and Lemony Sauce - De Puy lentils are cooked with Suppengruen (the German mirepoix of diced celery, carrots, celeriac and leek - normally parsley roots are also included but are often hard to find in the US), garlic, tomato paste and vegetable broth. In parallel, you pan-sear pressed extra firm tofu until it gets some color. The sauce consists of yoghurt, lemon juice and zest, a little bit of honey and cayenne pepper. Once the lentils are cooked, the sauce and tofu are added

I know it doesnt make any of you feel warmer, but its cold in FL too.

A front came through Monday morning…it was 73 at 9 am, and frost Monday night, and we havent seen 60 since. Maybe 63 today.

Im SO grateful that this cold snap didnt hit last week when we were all living in our tents.

I’m not really complaining. We have a warm house with power & two snuggly cats, and due to my recovery I am not obligated to leave the house unless I want to (or have yet another doctor’s appointment). Most aren’t that ‘privileged,’ so I am deeply grateful — even if I wish my work sitch were otherwise :woman_shrugging:t2:

At least I have a busy February coming up :woman_dancing:t2:

Our dear friend on the Satellite Coast shared the FL temps & I was pretty surprised it can even get that cold down there! How lucky your camp didn’t suffer this cold, indeed!

Thank you! I made the avo hummus. It was rather ad hoc. I took 1/2 a cup of homemade hummus, and blended it in a small food processor with one small avo, a squeeze of lime, and a pinch or two each of cumin, cayenne, and salt (all to taste). So good!
