Patty melt using leftover Salisbury steak, onions, extra sharp cheddar & gouda on marble rye. Red potato salad, sweet onion, hbe, dill pickles, mini red pepper, dill and parsley, sour cream/mayo dressing, paprika.

Soooo…trying to lighten my meals this year. I still enjoy beef, pork, and duck WAY too much, but I need to do better. More chicken and seafood.
So some Atlantic cod was defrosted, seasoned with a spray of cooking spray and s/p, and baked at 425° for about 13 minutes or so.
I augmented 2 Tbsp of leftover cognac cream sauce with 2 tsp of fresh lemon juice and freshly minced parsley and briefly reheated in the microwave. Probably not THE healthiest, but I couldn’t bear to throw away the rest of the delicious sauce I had used on a filet mignon away on NYE, and it worked out nicely for the cod.
Sides were leftover Israeli couscous and newly steamed green beans.
A single glass of wine.
And 3 pomegranates were deseeded yesterday, frozen on parchment in 2 batches, then transferred to Ziploc bags to use later.
Dinner tonight was a salmon arugula salad. I didn’t have any parm on hand so I added half of a perfectly ripe avocado. I bought this salmon fillet at Farm Boy and it’s the best salmon fillet I’ve had in awhile.
Last night we were running around between grocery shopping, cooking, playdate, and preparing to go out to a show. I threw together pork chops in a mushroom cream sauce with white rice and peas and broccolini. Worked, but I really don’t think pork chops slow cook well, even in a low oven.
I just have 1 goal: To cook more.
In 2025, I spent WAY too much money eating out (how much? I don’t know. I just felt like I ate out almost every day). So it’s my goal in 2026 to eat out LESS and cook MORE.
For my dinner today:
Oven-baked pork chops, topped with gravy and served with mashed potatoes and salads.
Quick, easy, 30-40 minutes and DELICIOUS!!
We enjoyed another outstanding dinner at The Farmer’s Daughter, in Newton, NJ, including fork tender, melt in your mouth, Wagyu pot roast, with cabernet sauvignon gravy and truffled mashed potatoes; caviar linguini; steak tartare; crispy Brussels caesar with a crispy parmesan crust; crab cake. It all went great with an excellent red blend and cabernet.
Garden tomato-basil soup (from frozen). Garlicky cheddar-parmesan croutons. Salt-and-pepper wings in the convection oven.

Vegetable soup for a blustery, rainy day. Leeks, shallots, garlic, ginger, carrots, mushrooms, peas, green onion in a dashi chicken broth with a splash of fish sauce. Pickled veg.
I had some potatoes that were starting to get old, so before they went bad – I made a Potato, Carrot, Onion & Cheese Casserole. I’ve made this many times before – it is a nice way to use up a lot of potatoes. Tasty and very filling!
