Another bitterly cold day, yet we made it to the gym for the first time since my PIC’s cold started up — a verrrry convenient excuse for me not to go, either

My PIC needed a nap after the exertion, but joined me for a quick grocery store trip to procure fixins for tonight’s & tomorrow’s dinners, and I ended up driving a few friendly folks thru the snow: a senior from Southern CA with whom I had a great conversation about the local food scene, and a couple I took to a restaurant who happened to speak German very well — also a fun convo. This is what I love about the job, other than driving in the snow ![]()
As for WFD, we’d debated Cubanos vs. quesadillas or tacos, what with TPSTO pork in the fridge, and I initially felt these temps deserved to be smothered in melty cheese. But after snacking on the guac I threw together (1.5 avocados, lotsa lime, Sinatra, hot sauce, cumin, tajin & salt) for our app
we decided tacos would be less heavy.
I quick-pickled half a shallot to add to the various accoutrements and hot sauces for the pork I crisped in the pan, and we each had 2 tacos on pan-fried tortillas.
Cubanos or quesadillas will have to wait till mañana.
I forgot a photo for the first time in a while, but it’s just as well, as it was a pretty mundane dinner: pan fried chicken cutlets, steamed broccoli, whole wheat spaghetti with marinara, and a green salad.
The chicken had woody breast, so we passed some of it onto our cat and reheated some homemade chicken tenders from the freezer as replacement.
We did potatoes, brussels, broccoli, rosemary focaccia, sausage tortellini, steak, bacon wrapped scallops, shrimp and mini sausage rolls. My gfs and I did a staycation at the Fairmont last month, and we all could not get enough of their cocktail sauce. My friend that lives locally joined us for fondue, and I surprised her with their sauce, plus a jar to take home. She was thrilled!
Ribs, mac and cheese (yes, that’s ketchup! I am Canadian after all), bagged salad and some leftover fondue veggies.
Pan-fried BC halibut filets. On the side, a sauce of mayo, dill, lemon, Dijon, and black pepper. Roasted carrots. Leftover potato and Emmenthal gratin.

I did it!
I made the lemony shrimp and bean stew. .and it was delicious! A little salty, as I didnt have any unsalted stock, and used BTB, but the smoked paprika added a delicious oomph.
I only made a half recipe, as I freeze shrimp in half-pound bags and one was already thawing in the fridge when I saw the recipe link. But thats ok…a bowl for dinner, amd a bowl for tomorrow.
NYT Miso, Mushroom and Leek pasta. This was just ok, nothing special. It won’t be taking up space in my recipe box. Panzanella salad.
I had to give even more blood (2x a week blood draws now—a real PITA!) on Satutday, so I decided to treat ourselves to fresh dungeness crab from Safeway. 4 crabs= $90, discounted to $37. What a d-e-a-l! I am an excellent cracker and picker when it comes to my very favorite food..![]()
So it was cracked crab, garlic bread and tossed green salad (mostly spinach for me for the magnesium and potassium) for Saturday’s dinner. Last night was more crab and salad. Tonight was latkes and panfried monk fish. Who knows what tomorrow will be…chemo on Friday, so I plan on getting ahead of the food prep game before then. Hubs will be home, so maybe he can pick up something instead of cook. Take out pizza would be fine with me.![]()
I had a really busy day today, so I fell back on an old (easy to prepare) meal.
Coconut Lemon Chicken Breast over rice with broccoli.
Picatta-ish black cod, with a brown rice and lentil pilaf, haricots and chanterelles. I forgot to add white wine.
Your semi-successful tornado is a lot better than my semi-successful tornado. I am inspired to try again. We have a new nonstick pan.

Portobellos with Truffle-Spinach Filling - not really photogenic but very tasty. Portobellos are quickly pre-seared under the broiler and then filled with a mix of spinach, truffle paste, truffle butter, onion, garlic, toasted breadcrumbs, cream cheese, parmesan and sage and baked in the oven
